Vary Baking Powder Biscuits To Swing In Flavor BY KATHARINE MIDDLETON No matter the season or the weather, baking powder biscuits, properly made, are always delicious and welcome additions to menus. And if you want to make them even more nutritious, as well as adding a slightly nutty flavor, then, starting with the basic recipe given be low, use 1 14 cups of the sifted Vitamin white flour in place of the 2 cups, and add Mix and bake as directed. The resulting biscuits are good yielders of Vitamin and have good flavor. They re fine, too, for tucking Into box luYiches. BAKING POWDER BISCUITS 2 cups.of sifted Vitamin white flour 1 teaspoon of salt 4 teaspoons of baking powder 2 tablespoons of lard or shortening 2 tablespoons of butter 34 cup of milk Sift flour, measure it, mix and sift flour, salt and baking powder twice.

Bacon dripping or chicken fat will maxe lenaer ana aeucious products if substituted for the lard or shortening and butter. Cut the fats into the flour mixture with a pastry blend er until you have a mealy texture. AddTailk slowly, stirring mixture with a fork. Turn onto floured board, and pat to i inch thickness. Cut with, floured cutter and place on a floured baking sheet.

Bake at 425 degrees for a bout 12 to 15 minutes. Yield 6 standard or 8 to 12 smaller biscuits. VARIATIONS Butterscotch Cartwheels: Use the basic recipe for bis cults; Roll lt.out on floured board to i inch thickness in an oblong shape. Brush lightly with melted butter. Sprinkle with 6 tablespoons of brown susrar mixed with i teaspoon of cinnamon.

Roll' this strip of dough up as for a Jelly roll. Wrap in wax paper and chill in refrigerator for at least an hour. Mix as for biscuits, then spread in floured, shallow cake pan.

Cream 4 tablespoons of lard or shortening thoroughly, adding 4 tablespoons of sugar and blending well. Add 1 teaspoon of ground cinnamon and 1 cup of fine, dry bread crumbs. Mix well, and sprinkle on top of dough. Bake as directed. Raisin or Currant: To dry ingredients, just before adding milk, add i cup of seedless raisins or currants.
