Finn Mrs. Stella Hallett, civic leader I i t- "MAMA COOKED Ibere a wood burning stove," Ralph Sabatini, her son, said. "Her reputation spread and executives from ail over the area came there to eat.

People gravitated to her as a person and no one lost touch. To all generations, she was Mama Sabatini. During World War II, the restaurant was razed to make way for the Ohio Street entrance of the Kennedy Expressway. She and her husband opened a new restaurant, Sabalini's, on the north shore of Long Lake in Lake County. Her husband died in 1918 on visit to his native village and she continued to run the restaurant.

Archbishop Lawrence Sabatini, a priest of the Scalabrini religious order, was the last bishop consecrated by Pope Paul VI. in 1978. Besides Mrs. Sabatini's sons Lawrence and Ralph, survivors include A MEMORIAL SERVICE was held Sunday for StelL Hallett, tl, of Evan ton, leader in a range of organizations that involved religion, temperance, peace, social service and ecumenism. She was also a Wader in the Daughters of the American Revolution.

Mrs. Hallett died Sunday in the Chicago home of her son, Stanley. The memorial service was held later in the day. For the last six months, Mrs. Hallett served as hostess at the Frances E.

Willard home in Evanston and was interim curator of the museum there. It is dedicated to Miss Willard, who founded the Woman's Christian Temperance Union. "She was a lovely person," WCTU president Martha Edgar said. "She was particularly interested in our organization's social services department and spent considerable time visiting the sick and elderly in nursing homes." FOR THE LAST TWO decades, Mrs. Hallett was active in the peace movement and in the Women's International League for Peace and Freedom.

She participated in many demonstrations against the Viet Nam war as well as more recent peace marches, according to Stanley Hallett. Mrs. Hallett researched family and Midwest history. She wrote articles for historical magazines based on family Civil War diaries and letters about pioneer life in Iowa. She also edited and published her father's account of his trip in 1907 on MASS FOR AubrM P.

Finn, 14, former member of the law firm of Finn, Tollkuehn It Smith, will be said Tuesday in Sacred Heart Catholic Church. Palm Desert, Calif. Mr. Finn died Saturday in his home in Indian Wells, Calif. Mr.

Finn was general counsel for the Chicago Regional Port District from lU creation in 1962 until his retirement in 1975. In 1954 he was appointed master in chancery of the Circuit Court of Cook County by the Supreme Court. Throughodt his career, he was an active member of the Republican Party, at local, state and national levels. From 1952 until 1968 he was a delegate to the national Republican conventions. MR.

FINN attended Chicago schools and De Paul University before earning his law degree at Georgetown University. During his legal career, Mr. Finn was an agent of the FBI from 1931 to 1932. He was also an assistant VS. attorney and was a counsel to the Illinois Legislative Commission on municipal revenue problems.

The honor of Knight of Malta was conferred on Mr. Finn on Jan. 15, 1962, by Cardinal Spellraan at St. Patrick's Cathedral in New York. Mr.

Finn formerly lived with his family at 7321 S. Shore Dr. and at 505 N. Lake Shore Dr. Survivors include his wife, Priscil-la; a son, A.P.; a daughter, Penny Witt; three grandchildren; and a sister.

She waa visiting her son Lawrence, the Catholic archbishop of Kamloop. A mass will be said (or her at 10 a Tuesday in Santa Maria Addolorata Church, Ada and Ohio Street! in Chicago. Mrs. Sabatini immigrated to the United States with her husband and two children in 1421 from Valbona, a village of less than 100 in northern Italy.

In 1937, she and her husband opened a family restaurant at 1064 W. Erie St. in Chicago and she became the cook. The front part was known as the Erie Sandwich Shop and the back had a large table and was called "The Board Room." Potato chips' Herman Lay DALLAS UPI Herman W. Lay.

73, snack food manufacturer whose potato chips were advertised as "so good, you can't eat just one," died Monday in Baylor Hospital after a brief illness. Mr. Lay founded ll.W. Lay and Company in 1939 after working for an Atlanta snack food manufacturer for eight years as an independent distributor in Nashville. Sales of his Lay's Potato Chips, which he continually tried to improve by developing better potatoes and cooking methods, grew rapidly.

Advertising for the chips touted them as "so good, you can't eat just one." In 1961, H.W. Lay and Company merged with Frito Company of Dallas, makers of corn chips and other snack foods, to form Frito-Lay Inc. MR. LAY served the new company initially as president and became chairman of the board in 1964, one year before the company merged with Pepsi-Cola Company to form PepsiCo. Inc.

Mr. Lay was elected Stella Hallett the newly constructed Trans-Siberian Railroad. Mrs. Hallett served for a year in La Paz, Bolivia, as a medical missionary in the Methodist Hospital there. She was active in many local organizations and was on the Evanston Ecumenical Action Council.

"She was a beautiful person and the link for these organizations," Richard Tholin, a professor at Garrett Theological Seminary in Evanston, said. She would keep everybody up on what was happening in the other groups." Mrs. Hallett was also a world traveler and, within the past 10 years, visited Russia, Japan, Great Britain and China. She presented slide shows and lectures based on her travels. Survivors include three other sons, Edward, Thomas and David; a daughter, Beverly Peterson; 15 grandchildren; two great-grandchildren; a sister and a brother.

Polish bishop, union backer WARSAW (UPD Bishop Ka-zimierz Kluz, auxiliary bishop of Gdansk and an outspoken supporter of the outlawed Solidarity labor federation, died in an automobile accident on a narrow country road, police said Monday. A Gdansk police spokesman said Bishop Kluz died instantly Sunday when the brakes of the Polish-made Fiat 125 he was riding in locked and the car crashed head-on into a tree. The driver of the car and a young seminary student who was also a passenger were critically injured and it was not known if they would survive, the spokesman said. Funeral arrangements for Bishop Kluz were incomplete.

His superior, Bishop Lech Kaczmarek, is in Rome for talks with Pope John Paul II. The police spokesman said Bishop Kluz was returning from a normal "pastoral visit" when the accident occurred. The prelate had been close to Lech Walesa, leader of the banned trade union Solidarity. E.G. Egloff, 89; ham radio pioneer Herman W.

Lay chairman of the board of PepsiCo. Inc. Born in Charlotte, N.C., in 1909, Mr. Lay attended Furman University in South Carolina. He is survived by his wife, Amelia; three children; and seven grandchildren.

"My father owned a radio station as early as 1905," said his son Fred. "He worked with boats crossing the lake. Later, he designed radios for Atwater-Kent, a company that no longer exists but whose name is well known to early radio buffs and MR. EGLOFF worked more than 40 years as a sales engineer for American Spring and Wire Specialty covering the Chicago area. Survivors, besides his son, Fred, include his wife, Pearl; another son, Ralph; two grandchildren; and one great-grandchild.

EDWARD G. EGLOFF. 89. a retired sales engineer and pioneer in amateur radio, was the second radio operator to be licensed in Illinois. A funeral mass for Mr.
