Chicken or Turkey Short-Cake The recipe as given is tor an individual service but when preparing for a large group many these short-cakes can be cooked side by side in a large baking pun. For each service, on top of a slice corn bread which has been toasted and very generously buttered, place a thin slice or boiled ham, cover the ham with a slice or two of the chicken or turkey, and smother the whole with gravy or a well seasoned cream sauce, containing a liberal amount of mushrooms Sprinkle the top with gvatcu cheese, place in the oven and bake until nicely browned. This is a delightful dish for a bridge luncheon, for so much the preparation can be done in advance. French Dipped Chicken or key Sandwiches Tur- Put in a casserole 2 to 3 cups cooked rice, with enough rich bvoth or chicken soup to cover it, adding 1 tablespoon melted butter.

Cover closely and bake in a moderate oven, adding more of the liquid from time to time as it is absorbed by the rice, continue until the rice is richly flavored and is a bright butter color. Cool and combine with 2 to 3 cups chicken or turkey, which has been cut in small pieces. Add bur hard-cooked eggs, chopped; 2 canned pimientos, chopped; Ji. cup chopped mushroom and 'salt pepper to taste. Spread on slices of buttered bread covering with another buttered slice, mak- ng regular sandwiches.

Cut into small squares, about 1 1-2 inches in size. Place on a greased baking sheet, placing them about half an inch apart and bake 12 to 15 minutes in a hot oven-- degrees. Serve at once.
