MASON CITY GLOBE-GAZETTE, MARCH 19 1936 NINB SOCIETY WOMEN HEAR DISCUSSION OF PROBLEMS (Continued from piige 8) Hard Sauce. 1 cup confectioners' sugar % cup butter % teaspoon vanilla % teaspoon salt Combine ingredients and cream well. Press into mold. When firm unmold and serve with Apple Dumplings. Sausage Jumbles. 1% pounds fresh pork sausage 2 large onions 3 tomatoes 12 bacon slices. Form the meat into patties one inch thick. Brown and place a thin slice of onion and a % inch slice of tomato on each meat patty. Cross two strips of bacon and wrap around each pile of tomato, onion and sausage. Fasten bacon strips with toothpick. Bake uncovered at 350 degrees Fahrenheit, 45 minutes. Serves 6. Green Gage Salad. 1 large can green gage plums % cup cold water 2 tablespoons lemon juice 1 tablespoon gelatin. Remove seeds from the plums and force .pulp through sieve. Add lemon juice and gelatin that has been soaked in the cold water and dissolved over hot water. Pour into mold. When almost congealed, add the cheese mixture. Cheese Mixture. % tablespoon gelatin 4 tablespoons cold water % cup whipping cream % cup mayonnaise % cup cottage cheese 2-3 cup salted almonds. Soak the gelatin in cold water, then dissolve over hot water. Allow to cool. Whip cream, add mayonnaise, cottage cheese, finely chopped almonds and gelatin and blend well. Pour into mold on top of plum mixture. Chill. When ready to serve, unmold on large platter garnished with lettuce. Serve with mayonnaise. Serves 6. Aristocratic Grill With Bananas. 6 lamb chops 12 small sausages 12 strips bacon 6 tomatoes 1 can whole grain corn 6 bananas. Heat broiler pan thoroughly to 350 degrees Fahrenheit. Place lamb chops in broiling pan allowing enough distance between the chops and the heat so that only one turning is required. Reduce the heat if necessary. Brown on first side, season with; salt and pepper, turn, add fsms8.gesl, bananas, .brushed with melted butter, and tomatoes stuffed with seasoned corn. Continue to broil- Add .bacon just in time to brown. Arrange meats on toast, using the lamb chops as the base. Use stuffed tomatoes and bananas as accompaniment. Serves 6. Chow Mein. 1% cups chopped onions 3 tablespoons lard 1% cups left-over veal, lamb, beef or pork 1 can' bean sprouts 1*4 cups shredded celery 1 can mushrooms 1 tablespoon brown sauce 2 tablespoons soy sauce Salt Brown onion in hot lard. Add meat, bean sprouts, celery and mushrooms, including liquid in cans. Add seasoning and salt to taste. Thicken slightly with flour which has been smoothed to a paste. Serve over chow mein noodles. Serves 6. Cherry Rings. 6 %-lnch slices bread 2 eggs, beaten slightly % cup sugar 1 cup milk 1-3 teaspoon salt 1 teaspoon grated orange peel Macaroon crumbs Bread crumbs Shredded almonds. Cut slices of bread into rings with a cooky cutter. Combine eggs, sugar, milk, salt and orange peel. Dip the bread rings in this mixture, then in fine macaroon crumbs, again in egg mixture, and finally in bread crumbs. Fry in deep hot lard at 360 degrees Fahrenheit, until a goldlen brown color. Sprinkle the top of each' with sugar and shredded almonds. Serve with a hot cherry sauce made as follows: Cherry Sauce. 1 tablespoon corn starch Cold water 2 cups canned cherries and juice Lemon juice. Mix cornstarch with a little cold water, bringing it to a pouring consistency. Add cherries' and juice. Cook, stirring constantly. When thickened and smooth, put pan over hot water and cook 5 to 10 minutes. Add a dash of lemon juice just before serving. Serves 6. Lamb Trotters. Frenched lamb shanks Salt and pepper Lard Water. Purchase one lamb shank for each person. Season with salt and pepper and brown in hot lard. Add y, cup water, simmer, adding water as needed. Cook until tender. Thicken gravy and serve with steamed rice. Frozen Triumph. 1 pint heavy cream % cup confectioners' sugar % teaspoon salt 1 cup top milk % cup pineapple, chopped % cup candied or maraschino cherries, chopped % cup shredded almonds % cup vanilla wafer crumbs 1 tablespoon rum sauce. Whip cream, add powdered sugar and salt. Thin with top ailk. Add remaining ingredients and pour into freezing trays, place in refrigerator and allow to freeze. No stirring is required. Serves 8-10. Creole Bice and Kidneys. 2 tablespoons chopped onion 2 tablespoons cfiopped green pepper 2 tablespoons butter 2 beef kidneys 2 cups tomato juice 1 cup chopped celery % cup uncooked rice Salt and pepper Cook onion and green pepper in butter about 5 minutes. Add kid_ney, cut in % inch slices and cook about 5 to 10 minutes. Add tomato juice, celery, rice and seasonings. Cook slowly for 30 minutes or until rice is done. Serves 6.
