She concocts it with a knowing hand and a dash of imagination, but the following proportions will produce one of the world's finest stuffings for the holiday bird. Brown Rice Turkey Stuffing (For 16-pound turkey) 16 cups cooked brown rice (6 cups raw rice, cooked) 4 cups fine cut celery 2 cups fine cut onion pound butter 2 teaspoons leaf sage, crushed Black pepper and salt to taste 2 cups chopped pecans (or filberts) 34 pound bulk sausage, sauteed but not bf owned 1 cup butter (op less, If sausage is fat) 4 eggs, beaten separately METHOD: Cook brown rice in boiling salted water until tender.

Drain and rinse well with cold water. Saute celery and onion in one-half cup butter until tender but not brown. Combine rice, seasonings, sauteed vegetables, pecans and sausage; blend well. Add melted butter, beaten egg yolks and mix. Fold in well-beaten whites.

Correct seasoning to taste with additional sage, salt and pepper if desired.
