TmniSDAY, MAY », 1993 Clam Sauce Is Italian Favorite Recipe Provide* A Tasty Covering For Hot Spaghetti A wonderful pile of hot spaghetti covered with Italian clam sauce Is easy to prepare. White Clam Sauce (for Spaghetti) (Serves 6-8) Thirty-six cliowdor olanv= v->. Juice or equivalent amount quality canned minced clams, 6 cloves gai- JV,« cup olive oil, few sprigs par*"• ground red pepper, black — per. Remove clams from juice and cook juice to a' boil. Chop clams, garlic and parsley fine. -Heat olive oil in saucepan with garlic until garlic Is slightly brown. Add clams juice, dash of black pepper, few pinches red pepper nnd parsley. Cook covered over low flame for 10 minutes. This snuce Is sufficient for blending with two pounds of spaghetti. ' Here's another really delicious but not very familiar dish: lamb Kibobs anil Rice (Serves 2) Sixteen <l',i x -/-inch) squares of tender lamb, without bone cut cross grain, e tiny whole onions peeled, 8 (2-inch) squares green Pepper, a (tny tomatoes or wedges H cup olive oil, 14 cup vinegar (tarragon preferably), l teaspoon orenano, 1 teaspoon salt, 3 teaspoons rich prepared musiard, ',1 teaspoon pepper, 1 clove garlic, finely chopped, 2/3 cup quick-cooking rice. Wipe Iamb cubes with damp cloth Place In a large bowl with vegetables. Mix remaining ingredients exl t->» r] ce. and add. Let stand 2 hours in refrigerator; stir several times. Arrange lamb and vegetables on 4 long or 6 short skewers (metnl nut picks are good substitutes). For well-done lamb, leave space between pieces on skewers; for rare place close together. Broil under medium heat 10 to 12 minutes turning until well browned Serve with quick Turkish rfre made by adding ice cubes to M cup drippings to make v, cup cold liquid. Add to instant rice and cook according to package directions. Pry bacon until crisp, then mince. 6aute onions in bacon drippings. Mix nil ingredients except uncrush- *d corn chips. Top with cheese and uncooked corn chips.
