Mabel Stegncr, wiio hafls from the Midwest, served it to us a while back and we vote lor it. t Sauce for Spaghetti (yield: l!i cups spaghetti sauce, enough for 4 generous servings) Two tablespoons salad oil, 1 clove garlic (minced), 3 cups finely diced peeled eggplant. 1 pound, 8-ounce can tomato sauce, 1 cup water, 1 teaspoon salt, 1 teaspoon sugar, l ' n teaspoon pepper, 1 teaspoon kitchen bouquet, 2 tablespoons minced olives. Place oil in frying pan. Add gar. He and cook 1 minute. Add eggplant. Continue to cook for 10 into utes, stirring frequently. Add re- mainlng ingredients. Mix well nnd bring to boil .Cover and cook slowly until eggplant falls apart, about 15 minutes. Remove cover and continue cooking until sauce is desired consistency, about 20 minutes longer. Serve over freshly cooked spaghetti and accompany with grated Parmesan cheese. While on the subject of eggplant let's try this one: Baked E^planl, Vienna (Serves 4 or 5) Peel and dice about 2 pounds eggplant. Cook, covered, in boiling salted water 10 minutes, or just until tender.
