Those 3 F's—Food, Fads and Finance. There are fashions in food and food fads come and go but the financing of food industries goes on forever." Certain food habits are associated with certain localities: Frying spring chickens in Iowa—better than any other place; "Boston, the home of the bean and the cod;" White eggs in New York, brown ones someolher places. Iowa's vegetables are on a par with the chickens and together they are par excellent! Try the following combination for an .appetizer: Spring Vegetable Soup Wash and cut into slices 2 small heads of lettuce, place in a saucepan with 2 cups green peas, one medium sized onion minced. Cover the vegetables with a very small amount of water, add a tablespoonful of butter and simmer until lender. Add 5 cups soup stock, cover and simmer another half hour. Ten minutes before serving place the yolks of 3 eggs in a bowl, beat slightly, mix with cup cold stock. Remove the hot soup from the heat, add a little oi the hot soup to the egg mixture, blend ana stir gradually into the soup as in making a boiled custard Season soun with salt and pepper adding a tablespoon of butter. Chicken Loaf 4J- to 5 pound chicken, cooked boned and diced 2 cups fresh bread crumbs 1 cup cooked rice 1^ teaspoon salt i cup chopped pimientn 3 cups chicken broth or half milk 4 eggs well beaten Mix all together adding eggs last. Bake one hour at 350 degrees in baking pan or ring mold. Here's a treat for a cool rainy day: Date Bars i pound dates seeded and cut Boil until thick, allow to cool. 1 cup sugar Mix together: One cup brown sugar, 2 cups flour, 3 cup butter 2 cups oatmeal, 1 teaspoon salt Spread in buttered pans and cover with dates.
