When I was a little girl, the cookbook published by a Canadian flour milling company was a favorite in our household. We were always delighted when on baking days my mother turned to the chapter called "Small Cakes of All Kinds." There was a subhead under thai main title that stated these small cakes were commonly called "Goodies" and still a third subhead that termed them "Jam Jams." When recently T opened my mother's old cookbook, I notec that there were three kinds ol Jam-Jams: plain sugar cookies put together with jam, gingerbread cookie sandwiches, and oat meal cookies with a date, rasin or fig filling. Of that assortment, my mother made the Oatmeal Jam-Jams most frequently, and not only at holiday time but all the year through. My sisters and I downed dozens of the cookies, and my mother felt the combination 'of rolled oats and dried fruit was a nutritious one. We've brought-that recipe for Oatmeal Jam-Jams up-to-date so you can try them on your family. They are a fine substantial sweet and store well. Make some to give dessert for your tree - trimming away; keep some to serve as [upper. This new version of Oatmeal Jam-Jams calls for grinding the rolled oats; this technique helps ;o give nutty -flavor and crisp .exture—both attributes that are delicious with the soft date filling. The filling itself takes on flavor 'rorn the grated orange rind and orange juice with which it is lealed. Oalmcal Jam-Jams Ingredients: 1% cups uncooked rolled oats (quick or old-fashion :d), 1V4 cups sifted flour, W lea- spoon baking soda, J ,i teaspoon salt, V4 cup shortening (soft), 1 cup sugar, 2 eggs, 1 tablespoon milk, 1 tablespoon vanilla, Date Filling. Method: Grind oats with fine blade of food chopper; then, should be l'/4 cups'of the ground oats. Sift together flour, baking soda, and salt into a mixing bowl. Add shortening, sugar, eggs, milk, vanilla, and ground oats. Mix until smooth, about 2 minutes. Roll out on lightly floured board to is-inch thickness. Cut with floured medium-sized round cookie cutter. With a small star-shaped cutter, cut the center out of half the cookies. Place the plain circles of dough on a lightly greased cookie sheet. Place about a teaspoon of Date Filling on each. Cover each with a star-cut circle, pressing edges together. Reroll scraps of dough and cut out as above. Bake in hot .(400 degrees) oven 8 to 10 minutes. Makes about 3 dozen cookies. Note: A doughnut cutter may be used for cutting the top circles of the cookie dough, and a matching size plain round cookie cutter may be used for the bottom circles. Date Fining Ingredients: I package (G'-j ounces) pitted dales, 1 cup sugar, Vz cup orange juice, 1 teaspoon grated orange rind. Method: Slice dates; put in saucepan with sugar, orange juice and grated orange rind; cook over low heat until thickened, stirring often (5 to 10 minutes). Cool thoroughly. Captured thieves are festooned with their loot and exposed to public ridicule in Yemen, southern Arabia. Grated carrots, raisins and mayonnaise make a nutritious sandwich spread for youngsters. Plump the raisins by letting them stand in very hot water a few minutes.
