E2 THE HARTFORD COURANTt Wedrmckry, November 6, IMS Food Notes JV Pepper Puree Is Red-Hot Treat At Home, Abroad By CECILY BROWNSTONE Associated Press Red pepper puree, made from fresh, sweet red peppers, caught on in this country several years ago. This happened because American cooks visiting France found that celebrated restaurant chefs in Paris were creating many delicious dishes with the puree. It was used to make a sauce or filling for all sorts of rom fish and vegetables to tartlets and ravioli. Making the puree took time and effort because pounds of the peppers had to be roasted and peeled. But the roasted and peeled red peppers available in jars in most supermarkets are a shortcut.

To prepare the sauce, all a cook must do is puree these peppers (with the four other ingredients called for) in an electric blender. 'Ramble' To Benefit Temple, Six Hartford restaurants will cook up an intriguing menu for the Restoration Restaurant Ramble, a roving dinner party Nov. 1 8 to benefit the Charter Oak Temple. Hours are 6:15 to 9:30 p.m. Guests will be able to choose an appetizer at one restaurant, main course at another and dessert at a third.

The evening will end at the temple with coffee and cordials by Spiritus Wines and a tour of the renovated building. The restaurants include Au Musee, Capitol Fish House, L'Americain, Panache, Shenanigans and Spencer's. All the restaurants are neighbors of the temple, which is at 21 Charter Oak Ave. There will be free parking at the corner of Charter Oak Avenue and Main Street, and ramble guests may walk or ride to their dinner courses. The menu is varied and in- -eludes escargots in Roquefort with garlic cream sauce and served in puff pastry, zucchini and langostino soup; Oriental cellophane noodles with beurre blanc, nuts, tofu and vegetables; crabmeat-stuffed sole; roast leg of lamb with port wine butter sauce; and lemon mousse with raspberry sauce.

The Charter Oak Temple, the state's first synagogue, was built in 1876 as the first home of the Congregation Beth Israel. The building was scheduled for demolition when the Charter Oak Temple Restoration Association purchased it in 1981 from the Hartford Redevelopment Agency. The association is restoring the building, designated a historic landmark, to be used as a neighborhood cultural center. The current exhibit, "From These Walls," is a display of pottery and ceramic sculpture. Tickets for the Restaurant Ramble are $60 per person, $50 for association members, and $100 for patrons, who will be chauffered to the various restaurants.
