Mrs. Alfred Snyder's Kitchen Becomes a Holiday Bake Shop By Sharon Heisel (Foods Editor) Hardly a week goes by that the kitchen of the Alfred Snyder home in Carroll does not smell of fresh baked goods. As the Christmas season approaches, the baking steps up, and the whole house takes on the look and scent of a holiday bakery shop. Chief baker is Mrs. Snyder, but she has plenty of helpers, in the form of her children, Rosanne, a sophomore at Kuemper High School; Gina, a sixth grader at St. Lawrence; Michael, a second grader; and Renee, a first grader. Son Terry, a Kuemper senior, appreciates the finished product, but rarely helps with the baking. Mrs. Snyder says she "loves to bake." Although her mother, Mrs. William P. Schenkelberg of Carroll, is a very good baker, Donna Snyder didn't begin baking until she was married. Now she speaks about baking in the same glowing terms a football fan uses for his favorite team. For the past four or five years, Mrs. Snyder's children have gotten into the Christmas baking act, decorating Paintbrush Cookies. "I guess the reason I bake these is that the kids have such fun decorating them," she explained. The children really use their imagination, decorating the fancy cut raw dough with egg yolk paint and colored sugars and cake decorations. The result is a pretty and good-tasting cookie. Guests in the Snyder home during Christmas wonder at the amount of time and hard work that must go into these cookies, but for the Snyder family, it's just fun. Mrs. Snyder traditionally spends Christmas Eve baking a triple recipe of Maple Butter Twists, to take to her mother, her mother-in-law, friends and relatives. She describes this gooey coffee cake ring as a "nice last minute gift idea." Her friends and relatives always look forward to her Christmas Eve visit. Other traditional holiday fare served by Mrs. Snyder at neighborhood coffees is chocolate fudge (her husband's favorite), carmel candies, chocolate and white covered pretzels butter cookies, date bread, Date 'imei Herald, Carroll, la. Wednesday, Nov. 18, 1970 Bon Bons, divinity and Thumbprint r.okies, made by Rosanne. Many of these holiday goodies can be made up ahead f time and stored in the reezer, "always on hand for neighborhood coffees." Non-holiday baking at the Inyder home includes dark and white bread, buns and rolls. Saturday is reserved for baking. Rosaline helps with the cookies, and Michael and Renee like o shape the buns. During golf season, Donna Snyder can be found at the Country Club. She had golfed before she was married, and ust got back into the sport two rears ago, when her husband took it up. Although she was runner-up in the Ladies Golf Association Invitational this fear, she says her husband is ;he better golfer. Mrs. Snyder s active in the Catholic Daugh- ;ers of America, and serves as treasurer of St. Lawrence uild. The Snyders have recently completed the basement of their split-level home, and for Christmas, the children will decorate their own tree for the basement family room. The Snyders always have a flocked tree in their living room, decorated with either red or blue balls. Here are some of the recipes for the goodies the Snyder's friends and neighbors can sample during the holidays. Paintbrush Cookies % cup soft shortening (part butter) 1 cup sugar 2 eggs 1 tsp. vanilla or lemon flavoring 2% cups flour 1 tsp. baking powder 1 tsp. salt Mix shortening, sugar, eggs and flavoring. Sift dry ingredients and stir in. Chill one hour. Roll out Vs-inch thick Place on sheet and paint with Egg Yolk Paint. Bake at 350 degrees, 6 to 8 minutes until set but not brown. Makes 4 dozen. Egg Yolk Paint 1 egg yolk ¥4 tsp. water Blend well; divide into custard cups and color as desired with food coloring. Use separate brush for each. Use imagination and decorate with sugar an< other cake and cookie decora tions. Maple Butter Twists Soften 1 package of yeast in % cup warm water Combine with: % cup butter 3 tbsp. sugar 1% tsp. salt % cup scalded milk Stir in 2 eggs Add 3% cups flour Let the dough rise Filling Cream % cup soft butter am combine with: % cup brown sugar y< cup maple syrup % tsp. cinnamon % cup chopped nutf % cup white sugar i tbsp. flour % tsp. maple flavoring Divide dough in half. Roll out portion to 14 x 18-inch rectangle. Ipread with half of the filling. Roll up, starting with the 14- inch side. Cut roll in half, engthwise. Twist strips together, cut side up. Shape into ing. Place in greased round pan. (A round cake pan, with t small, greased can In the cen- er may be used.) Let rise. Bake at 350 degrees or 25 to 30 minutes. Remove rom pan immediately. May be frosted if desired, or decorated with red and green cherries to resemble a wreath. Date Ben Bons 1 pound dates, cut up 1 cup chopped .nuts 1% cups chunky peanut butter 2 cups powdered sugar 6 tbsp. melted butter Mix ingredients and shape nto little balls. Chill several hours. In top of double boiler, over lot, not boiling water, melt a 12 oz. package of chocolate chips and % stick paraffin [from a box of four sticks. This helps the chocolate to set.) Put about 10 balls into the chocolate; roll them around and remove with tongs. Place on wax paper until set. These freeze nicely. Thumbprint Cookies % cup soft oleo % cup brown sugar 1 egg yolk % tsp. vanilla Cream sugar and oleo; add egg and vanilla and 1 cup flour. Roll in small balls; dip in slightly beaten egg whites and roll in finely chopped nut meats. Bake 5 minutes in a 325 degree oven. Remove from oven and press thumb gently on top of each cookie. Return to oven and bake 8 to 10 minutes longer. Watch closely as cookie burns easily. Place tinted powdered sugar or frosting in thumbprint. Makes 2 dozen. Divinity Candy 2V 2 cups sugar ¥2 cup white syrup % cup water 2 egg whites, beaten stiff Mix together sugar, syrup and water. Boil until it forms a soft ball in cold water. Add half to beaten egg whites, and then boil other half until it forms a hard ball in cold water. Add to other mixture. Add vanilla and nuts and beat until stiff. Drop by teaspoonful on waxed paper. A fruit cake or gaily decorated container of cookies will be appreciated by everyone with holiday entertaining -on iheir mind. If you've only eaten dark fruit cake, you should try this recipe for white fruit cake. It's loaded with fruit and nuts, and preparation time is shortened by the use of a boxed cake mix. Grandma Dunn's White Fruit Cake 1% cups candied cherries 1 cup candied citron ! J /2 cups candied pineapple 1 cup chopped dates (optional) 1 can moist coconut 1% cups pecan halves IVz cups Brazil nuts, cut in quarters (other types of nuts may be used if desired) 1 box white cake mix, 2-layer size 3 tbsp. shortening 1 cup boiling water 4 eggs 3 tbsp. orange juice Empty cake mix into large mixing bowl. Put 3 level tbsp. of shortening in a pan and add 1 cup boiling water. Let stand for 30 minutes until shortening is well melted. Cut fruit and nuts while waiting for the shortening to melt in the boiling water. When melted, add the shortening and water to the cake mix and beat 2 minutes with an electric mixer. Add 4 eggs and 3 tbsp. orange juice and beat another 2 minutes. Fold in fruit, nuts and coconut. Line two loaf pans with heavy oiled brown paper, or brown paper bags covered with wax paper. Spoon the cake batter into the pans. Bake at 300 degrees for 2 J /4 to 2 2 /2 hours When a toothpick comes oul clean, it is done. When you start baking the fruit cakes, cover each pan with a piece of brown paper to keep the tops of the cakes from getting too dark Remove the paper after one hour of baking. Fruit cakes keep well in tightly covered containers, and may be kept in the refrigera tor up to a year. The flavor o fruit cakes improve with age Yield: 2 loaves. Corn flakes may or may no be a hit around your house a breakfast time. But baked up in these crispy, crunchy noli day cookies, they're sure to please. Their bright red cherrj center makes these cookies an attractive addition to an; Christmas cookies platter These cookies keep well am are great to mail >randpa Dunn's Cherry Winks 2 ] /4 cups sifted flour 1 tsp. double acting baking powder ¥2 tep. soda a /2 tsp. salt % cup shortening 1 cup sugar 2 eggs 2 tbsp. milk 1 tsp. vanilla extract 1 cup chopped pecans 1 cup chopped dates Va cup chopped maraschino cherries Additional cherries for decorating 2 J /2 cups corn flakes, crushed Sift together dry ingredients. Combine shortening and sugar, cream well. Add eggs, milk and vanilla. Blend in dry ingredients; mix well. Add pecans, dates and chopped cherries. Mix well. Shape into a ball using a level tablespoon of dough for each cookie. Roll each ball of dough in corn flakes. Place on greased cookie sheet. Top each cookie with Vt maraschino cherry. Bake in moderate 375 degree oven for 10 to 12 minutes. Do not stack or store until cold. Yield: approximately Food Column ... See Page 5 'Hanukka 9 Means Dedication to Jews Happy Hanukkah cards come n a variety of shapes, colors and designs, but the most popu- ar are the ones depicting nine ighted candles in an eight armed Menorah with an addi- ional candlestick holder rising ligher in the center, according to a spokesman for Norcross. Hanukkah means dedication and this eight day holiday, also called "The Festival of Lights," aegins on the 25th day of the Jewish month of Kislev whch falls during the month of December. The holiday originated in 165 B.C. It was then that Judah the Maccabee and his band of guerillas marched triumphantly into Jerusalem after defeating the four armies of the tyrant Syrian king, Antiochus IV. Much to their dismay they found that the Temple had been desecrated by the enemy. It would have to be cleansed and re-dedicated before it could be used again as a place of worship. However, in the midst of the destruction, only a small flask of oil to relight the Menorah could be found. But, miraculously, according to the Talmud, the lamp burned for eight days, until a new supply of holy oil could be obtained. Since then the Menorah has become the symbol for this holiday. When the first Hanukkah Menorah was made, the Jews recognized that it was forbidden to imitate the seven-branch candlestick of the Temple. Also, they wanted to honor the little jar of oil that had served them well, so they designed an eight armed lamp with an individual center shaft for the shammash (servant light) by which all the wicks were lit. No special services are held in the synagogues, but, at the evening service, the candles are lit just as they are in the Jewish home. The first night, one candle and each succeeding night, another candle is lit, until on the eighth night they all bum brightly. A favorite custom among.' many Jewish families is the- giving of gifts to the children.r An interesting coincidence is* that Christmas is celebrated in^ t the same season as Hanukkah, and that candles in the window*^ of Christians carry the message of peace on earth good will towards men. And, as for so many centuries past, at the— same time Hanukkah lighter^ shine from the Menorahs in-Jewish homes, proclaiming the" " victory of God and the eventual triumph of free men.
