There are a number of varieties of this plant, but the well- known or common type is sweet basil. It is an Old World plant which originated in the East, in India and later was cultivated in Europe. It has been held in high esteem for many years. The Ancient Greeks called it "the herb of kings." In old England, it was considered an honor to be presented with a pot of basil. Basil is an annual, planted by seed, in the late spring when the -weather is warm.

It resembles spearmint, with tooth-edged leaves and small, white or purplish flowers. It grows about one foot tall, and is prized for its purple- tinged leaves which are gathered during the growing season for use as seasoning in cooking and for medicinal purposes. It can be brought indoors and cultivated in pots during the winter. The leaves of basil are used in seasoning soups, steaks, duck, spaghetti sauce and cheese and tomato dishes. The delicate mint-like flavor of basil resembles somewhat the flavor of cloves.
