' . * — " v v ^*- •+** *~r *.«. mj Almonds, besides decorating cakes and garnishing fish and vegetables, make a, very, fine soup. It's an elegant beginning, to a meal, and quite easy to do. Blanch \k cup of almonds— cover with boiling water, let stand a few minutes, then drain and slip off the skins.. Puree them— grind, chop fine and mash, or put them through, a blender with a little liquid. In a saucepan, blend 2 tablespoons of butter with 2 of flour. Add 2 cups of chicken broth and stir smooth. Add • almonds, cook a few minutes more, then add" a cup of medium cream and heat through. - • Finally, add salt and pepper to taste, a touqh of nutmeg and about Va teaspoon of grated lemon rind: • . When the cake is cool, place a lace paper dolly over it. Sift confectioner's sugar evenly over_. the top, then remove the dolly. You'll have a most elegant lace pattern in sugar. .. To make the crusts, sift together IVS cups presifted all-purpose flour and -¥4 teaspoon salt. Cut'in .& cup shortening with kriives or pastry blender. ' . -'-'>Add •'% 'cup grated American cheese: 'mix well. Add about 3 ablespoons cold water — or just enough to hold ingredients togeth- >r. Chill. (Or, you can use your 'avorite pastry mix. and add the grated cheese.) Combine 2 cups canned apple sauce, 1 cup chopped, pitted dat*s. cup brown sugar, Vi teaspoon nutmeg, and IV: teaspoons grated emon rind; mix well. Line six 4-inch individual pie plates with pastry, reserving enough for tops. Place an equal amount of apple sauce'mixture in each., Moisten edges of pastry with cold water. Roll out remain- Ing pastry and cover tops of pies. Press edges with tines of forks; trim pastry to edge of pie plate. Prick tops to allow .steam to escape. Bake in a hot (400F.) oven for 30 minutes. (This recipe will also make one 9-inch pie.) Tomato and Bacon Sandwiches Blueberry Upsidedown Cake Beverage Blueberry Upsidedown Cake Ingredients: I pint basket cultivated "blueberries, 1 tablespoon butter or margarine, % cup firmly-packed light brown sugar, 1% cups x sifted cake flour. .1*4 teaspoons double-acting baking powder, % teaspoon salt, Vi.cup butter; or margarine, % cup .granulated . sugar, 1 egg,- % teaspoon vanilla, grated rind of 1 lemon (about 1 tablespoon), % cup milk. Method: : Wash blueberries in cold water, pick over and drain well in colander. Melt 1 tablespoon butter in cake pan (8 by 8 by 2 inches) so it is evenly distributed over bottom of pan; remove from heat.
