The tree, part of the laurel family, has been introduced "around the world and is grown in China, the West Indies. Brazil, Egypt, California and Florida. From Ceylon, however, comes the majority of the world's production and the finest quality. The cinnamon tree is continuously cut back to Ihe trunk to produce a bushy, shrublike tree which will form suckers or "water sprouts." The bark of these shoots contains the oil responsible for the cinnamon fragrance and spice. In summer, when abundant sap permits easy peeling, the bark is stripped. The cut twigs are trimmed of theii leaves and hand peeled of their bark. Sections of inner- bark are then dried, stripped of the outer bark, and made into the hollow brown or djrk yellowish-red, tube-like cinnamon sticks. The fragments from this process are saved and pulverized to make dried cinnamon or extract. Once more valuable than gold, cinnamon was Ancient Egypt for embalming and witchery.
