ROAST VEAL SHOULDER 5-pound boned, rolled, tied veal shoulder roast 8 slices bacon '/i cup water 1 carrot, pared and sliced thin 1 small onion, sliced thin 3 tablespoons flour 2 cups fat-free chicken broth Place bacon crosswise over roast so top is almost all covered. Insert a toothpick at each end of bacon into meat to keep bacon in place. Roast meat on a rack in a roasting pan (ISVi by 9 by 2 inches^ in a slow (325 degrees) oven for about Wz hours. Add the water, carrot and onion to the pan. Continue to roast about 2 hours longer (40 minutes to the pound) or until a meat thermometer registers 180 degrees. Remove meat and rack; remove toothpicks; skim off fat from drippings in pan. Stir flour into drippings, then broth. Cook and stir constantly over low surface heat until thickened; strain. Serve gravy with meat. Simmering leftover slices of meat in the gravy makes meat very tender, but it is impossible to keep slices intact.
