Turkey and Bacon Holiday Salad Bowl {Yield: 4 *ervin*s) One-half pound bacon, 1 cup diced cooked turkey, 1 large head lettuce. 3 tablespoons diced onion, 1-3 cup crumbled blue cheese, % avocado, -peeled and cubed (or slivered greenpepper), 2 tablespoons diced pimento, French dressing. Cut bacon into 1 '/2-inch pieces «nd pan-fry slowly until crisp. Drain. Break lettuce into bite-size chunks into a salad bowl and sprinkle with onion. Scatter bacon, turkey, blue cheese, avocado and pimento over top. Serve with French I dressing. ; (Yield: 4 servings) j Ham Dumplings with Peas Two cups ground cooked ham, % cup finely chopped onion, 1 cup •oft bread crumbs, '/< cup flour, 1 egg, slightly beaten, 1 can (16- ounce) 2 cups peas, 1 can (10'/ 2 - ounce) beef bouillon. Combine ham, onion, crumbs, flour and egg. Combine undrained peas and beef bouillon and bring to a boil in a skillet. Drop ham mixture by tablespoonfuls onto boiling peas. Prepare dumpling mixture. Drop by small spoonfuls on top of ham mixture. Dumplings should not settle fn the liquid. Cover. Cook 12 minutes. Serve hot Dumplings One cup silted flour, 2 teaspoons baking powder, '/ 2 teaspoon shorting, % cup milk. Sift together dry ingredients. Cut in shortening: add milk, stirring dumplings with peas, whipped po- quickly to make a soft dough. Yellow Turnip With Nutmeg Ingredients: 1 large (about 2 pounds) yellow turnip, tt teaspoon Bftlt, 1/8 teaspoon ntumeg, 1 table- gpoon butter or margarine. Method: Peel turnip «nd cut In about 1- Inch piece*. Put io t saucepan and cover with boiling water. Cook rapidly, uncovered, until very tender—30 to 30 minute*. Drain well and ma»h until smooth with salt, nutmeg and butter. Reheat. Make* 4 servings. Braised Steak, Easy Skillet Main Dish Ingredients: 1'4 pounds boneless sirloin or top round beef (cut about Vi inch, thick). 3 tablespoons flour, 1 teaspoon salt, ',4 teaspoon pepper. 2 tablespoons fat. 1/3 cup finely diced onion, Hi cups canned mixed vegetable juice, 1 clove garlic (minced), 2 cups thinly sliced carrots, 1 tablespoon cooking sherry. Method: Cut beef Into serving- size portions. Mix flour, salt and pepper together; rub beef with flour mixture. Heat fat in large skillet; brown meat in it on both sides; add onion, vegetable juice, garlic and carrots. Simmer, covered, until meat is tender—about 1 hour. j Stir in cooking sherry.
