Sift the flour over the chocolate and stir to form a batter, mixing thorougly until flour is absorbed with a whisk, flat wooden paddle or spatula. Stir in the chocolate chunks. Scrape the batter into the prepared pan and smooth the top. Bake 30 to 33 minutes or until the center is gently set. (Bake about 38 minutes, until barely soft in middle, for an 8-inch-square pan, because the batter will be deeper.) Place pan on a rack to cool for 3 hours.

Cut into quarters, then cut each quarter into four squares. Remove from pan. Store in an airtight tin. Makes 16. Note: Superfine sugar is more fine than granulated sugar.

Dale Dear Dale, I am a faithful reader of your column. I couldn't resist giving you a little further history on the above location. The building where Joe's Crab Shack is currently was built in the early '60s (1963, 1 think) by my father, Harry Porter, a restaurateur from Corpus Christi. It was opened as the La-hala House, which was one of his places in Corpus. He was partners in that venture with Jim Hasslocher (Frontier Drive-In and Jim's Coffee Shop).

When my father decided that the commute between Corpus and Austin was more than he bargained for, he sold his interest to Jim. Jim changed the name to Steak Island and then converted it to Magic Time Machine. There wasn't much built on the water back in those days. Although my father passed away in 1982, people in Corpus still remember his food and service. In fact, just in November an t' article appeared in the Caller-Times about him and his Lahala House.
