Thi! book of many recipes shows you how to lose two or three pounds a week and still enjoy pea soup, pork chops, hot corn pone, apple pie a 1« mode and other mouthwatering dishes. Fried (Sicken of Chicken In a Basket Cut 3-pound fryer into serving pieces, unless you've bought "parts." Rub each piece of chicken all over with the inside of a lemon that has been cut into quarters, squeezing juice out as you rub. Then salt each piece liberally with seasoned salt, or onion salt, lifting the skin and salting well underneath it. Sprinkle with freshly ground black pepper. Put the pieces in a covered dish and let chicken marinate overnight In the refrigerator. When you're ready to cook it. put about 1 tea- •poon of butter or margarine in a heavy skillet and brown the pieces lightly on all sides, pressing the chicken down, then moving it around so thai it doesn't stick. As pieces brown, lift them into a broad, flat casserole. If the pieces aren't very well or evenly browned, don't worry, this will be done later. Remove chicken from skillet and keep warm. Add peas and pimientos (quartered) to skil- ict, including liquid in both cans. Stir over low heat with wooden spoon to get up browned particles in skillet; add a little more water if necessary to thin sauce. Pour over chicken and serve at once. Ingredients: 2 tablespoons butt* or margarine, 2 tablespoons flour 1 teaspoon salt, % teaspoon dry mustard, 114 °ups milk, 1 table spoon cider vinegar, 1 teaspoon kitchen bouquet, I cups finely shredded cabbage (pack-down), '/ pound cooked corned beef (cut In matchstick strips to make 2 cups (packed down). Method: Melt butter In 1-qu; saucepan over low heat. Stir in flour, salt and mustard. Add milk; cook and stir constantly over mod erately low heat until thickene< and bubbly. Remove from heat and stir in vinegar and kitchen bouquet.
