Pork Chops in Cream Gravy Four medium thick lean pork chops, salt, .pepper, sugar. 2 tablespoons flour, 1!4 cups fresh milk. Then add r ilk and stir rapidly over moderate heat until smooth and thickened. Pour over chops and serve. Chicken Smothered In Cream Gravy Five to 6-pound roasting chicken. '•> cup flour, U teaspoon poultry j seasoning, 1 teaspoon salt. !a tea-' spoon pepper, lz cup butter. 4 cups rich chicken broth, 1 cup extra chicken broth. Cut chicken into serving pieces and wash and dry them. Mix flour and seasonings together. Dredge pieces of fowl in this seasoned flour. Melt butter in heavy pot or deep skillet. Brown a few pieces of chicken at a time. Remove to a warm pan. When last piece has been browned and removed, add "Whatever seasoned flour is left to drippings in pot. Mix thoroughly until smooth and •slightly bowned, stirring constantly. Stirring all the while, slowly add 4 cups chicken brolh and cook until thickened and smooth. Place browned ctiicken in sauce, cover pot well and turner very slowly over low heat uh til chicken is tender: Peek in occasionally lest gravy cook down too far.
