Cane Sirup Cake. We are all up in the air on the sugar question. There have been all sorts of warnings In the newspapers, i and without a doubt certain canny people have laid in large stores against the rise in price. That may be one of I the treasons of the extreme shortage of the present, although there are other. 1 I and far more important reasons.

At present there is a more or less plentiful supply of eane sirup, because Ithe demaid has always been small for this rather strong form of sugar. One of the best known manufacturers of i sugar products has just put a new cane sirup on the market. This sirup used in coffee gives It an ugly shade, yet there Is not so much difference between coffee sweetened with cane sirup and a cup flavored with cane sugar as between some of the other products which may have either the one or the other type of sweetening. Take that simple cake recipe which we may vary so endlessly and hold always In high esteem since it Is but terless, and substitute cane sirup for cane sugar In that, using a scant cup. The formula Is: Three eggs, one cup of sugar, one cup of flour, one teaspoon or a little more of baking powIder, six tablespoons of hot water, one teaspoon of flavoring.

Separate the whites and yolks of eggs and beat each'. To the whites beaten to a stiff snow beat in gradually a scant cup of cane sirup as in making cooked icing.
