Infrtdients: 2/3 cup hot water, <A cup sugar, 1% teaspoons salt, Vi cup shortening, V, cup warm (but not hot) water, 2 packages active dry yeast, 1 egg (slightly beaten), 3Vi cups sifted flour, 1 cup dried apricots (chopped). Method: Mix together hot water, sugar, salt and shortening. Cooi. to lukewarm. Measure warm water into mixing bowl. Sprinkle in yeast. Stir until dissolved. Stir in lukewarm water mixture. Add egg, flour and apricots. Stir until well blended, about 2 minutes. Let rise in warm place, free from draft, about 50 minutes or until more than doubled in bulk. Stir down. Beat vigorously about u minute. Turn into greased iVs quart casserole. Bake uncovered in Try These Country Style Potatoes Hankering fcr the last* of country-style dishes? Ingredients: 3 tablespoons butter, 1|< cup finely diced onion, 3 cups finely diced peeled raw potatoes, 3 tablespoons flour, 1 teaspoon salt, . 1|S teaspoon pepper, 1|4 cup milk. Heat remaining 2 tablespoons of butter in skillet until! very hot; add potato mixture, pies-' sing down with large spatula. Cook over low heat until crisp and browned on bottom—30 minutes or longer. Turn out of pan or cut in pan and serve browned side up. Makes 4 to 5 servings. hot (400 degrees) oven about 45 minutes.
