COURIER NEWS Study Labels on Food Be/ore You Purchase By GAYNOR MADDOX i NE AFood and Markets Editor In order to g-et full value ior your food dollar, learn to check carefully the label on every box, package, can or container you buy. Then you will know exactly what you are getting. According to law, every food label must carry the following information: 1. Name of product. 3. Name and address of manufacturer, packer or distributor. 3. Net contents. 4. When significant, as in tile case of canned fruits and vegetables, the following information is required: a—Variety (for example, wmte or yellow corn). b—Style" of pack (whole, halves, diced, etc.) e—Packing medium (if optional media are permitted). 5. Statements of dietary properties, ,if special dietary uses are claimed. 6. statement of artificial colqring, flavoring or chemical preservatives, if used. 7. If below basic standard of quality or below standard of fill of container set by Food and Drug Administration, must so state in prescribed legal manner. 8. All words, statements and other information required by law must appear in the English Ian guage. ». Ingredients. (Many foods, for example canned peas, mayonnaise and margarine, for which the government has set standards of identity, do not require a declaration of all ingredients.) These Creamed Eggs are Simple But Very Good Simple but good! Ingredients: % cup butter margarine, 'A cup flour, 2M .cups milk, salt, pepper, celery salt, 8 hard-cooked eggs, buttered toast. Method: Make a white sauce of the butter, flour and milk; add salt, pepper and celery salt to taste. R/ce, Corn r ustard Good Casserole A Southern-style casserole makes a satisfying main dish. Rice and Corn-Custard Ingredients: 1 1/3 cups water, Vt teaspoon salt, 2/3 cup rice, 1V4 cups cream-style corn, 2 cups milk, 2 eggs (slightly beaten), 2 teaspoons salt, '.« teaspoon pepper, 2 tablespoons chopped canned pimiento. Method: Put water, % teaspoon salt and rice into a 2-quart saucepan; bring to a vigorous boil. Turn heat as low as possible. Cover and cook until rice is tender; If water has not all evaporated by time ric is cooked, drain it off. If water evaporated before rice is cooker" through, sprinkle rice with a cou pie tablespoons of hot water and continue cooking. Add water in this way as needed. Mix rice, corn, milk, eggs, salt, pepper and pimiento. Turn into a 2- quart baking dish. Place in pan of hot water and bake in moderate (350 degrees) oven for 1 hour or until a knife blade comes out clea- when inserted near center. Serve s once. Makes 6 to 8 servings. Slice eggs and arrange on butteret toast; pour sauce over. Makes to 6 servings.
