The turkey carcass, of course, means r large pot of delicious rich soup. Lei's turn to "Magic With Leftovers" by Lousene Rousseau Brunner, a new collection of 300 recipes using leftovers. It's a practical and enticing collection. Would make a good Christmas gift. This turkey soup recipe is one example. Turkey Soup (Serves up to 19-12) Turkey carcass. 1 bay leaf, Vo teaspoon marjoram, \'z teaspoon thyme. \'i teaspoon basil, 2 tablespoons buiter or margarine, 3 tablespoons flour, 1 medium onion chopped fine, ','2 cup minced celery, salt and pepper, !i cup raw rice. l /z pound mushrooms sliced and sauteed, 3 tablespoons Madeira or sherry, if desired, or 1 tablespoon lemon juice. Ingredients: 1>,4 cups (8 ounces) cooked and peeled and deveined shrimp, 1 package (6 ounces) pasteurized process Swiss cheese food, X cup mayonnaise, Juice of 'A lemon (3 to 4 teaspoons), ',4 teaspoon paprika, Vt teaspoon onion powder, 1 teaspoon Worcestershire sauce. Method: Put shrimp and cheese through fine blade of food chopper. Mix with mayonnaise, lemon juice, paprika, onion powder and Worcestershire sauce. (Make» about 2 cups.) Spread mixture over slices of bread, covering edges well. Broil until hot and lightly browned. Cut in triangular halves and serve »t once. delicious one It can be. To avoid keeping the turkey carcass on hand for several days, remove all usable meat from it as soon as possible and make the basic broth for turkey soup immediate!/. Br-~k up the carcass, cracking larger bones with a cleaver or hammer. Put in a l:.rge soup pot with bay leaf and other herbs, and enough water to cover completely, and simmer slowly, covered, tor 3 to 4 hours. Strain through a fine sieve so as to remove little slivers of bone, and sort out pieces of turkey and put back in the broth (At this stage broth can be stored to .make soup another day.) Melt butter in kettle large enough to ho.u the broth you have and blend in flour. Cook for a moment and then stir in stock gradually. Bring to boil and add onion, celery, rice, and seasonings to taste. Simmer until rice is sofr —25 to 30 minutes—and add mush rooms.
