THE TAMPA TRIBUNE, Tuesday, March 19, 1985 3-Pasco e's always in a pickle By CHRISTINE CRUMBO Tribune Staff Writer RIVERVIEW Those who can, do, and those who can't should know Mary Evelyn Smith. This is a lady who can can. And she has what she calls a ridiculous number of ribbons from the Hernando County Fair to prove it. There's a foot-long "Best of Show" purple ribbon, which she won for pepper jelly in the 1983 Hernando County Fair. And there are 42 first-place, 24 secondplace and six third-place ribbons, plus an assortment of others.

Smith adopts a humble tone when talking about the accolades she has received, joking that maybe she ought to learn to make a quilt from her ribbons. She seems just as impressed by her family's and neighbors' professions of love for the goods she learned to put up as a way to stave off hunger during the Depression. In a cool porch affixed to a neat-as-a-pin house and a tin-roofed shed are the fruits and vegetables of Mary Smith's labors jars and jars and even more jars of everything from grape juice to sauerkraut to black-eyed peas to pickles with sprigs of dill floating alongside the 6-inch cucumbers. "I don't throw anything away," boasts Smith, pointing out that she often uses the fruits and hulls in preserves. As a bonus, she saves money with her frugal approach: "I spent last month at the grocery store $21," says Smith, 72, who lives alone at home with her dog.

Smith this year is entering several cases of fruits, juices, vegetables and soup stock for judging in the Hernando County Fair. But she's pinning her hopes on something special, chayota squash pickles. For these special pickles, she takes "big old green things like this" (she touches thumb to thumb and index finger to index finger to make a big chops them and turns them into diced bits swimming in seed-dotted juice. She shows off a few of her glass enclosed creations by holding them up against the sunlight. The contents of the jars shine orange and red and honey-yellow. Grapes swim in juice. Black eyed peas crowd into the bottom of a jar. A pulp-flecked blend Smith calls "V-8 juice" is "out of this world," she brags.

Canning not only seems to be Mary Smith's livelihood, it is a large part of her life. She parlays the skills she learned "from cookbooks and old folks showin' me" into a way to earn ribbons. But it's also a way to meet and feed neighbors. And it's a way to stay busy for someone who doesn't like to watch a lot of TV and whose eyes aren't as good as they once were. She gives away many of her canned goods.

Some of the food goes to her son, a starving Tallahassee artist much of the time. When he's working, he eats storebought, and when he's not, he eats Mom's. And canning is a way to serve God, she says. Mary Smith gives much of her food to ministers and to the CLEMENT J. BROPHY, 75, of Port Richey died Saturday.

He was born in Johnsonburg, and moved to this area 13 years ago from Erie, Pa. He was a retired store clerk for a manufacturing firm. He was a member of Our Lady Queen of Peace Catholic Church in New Port Richey. He is survived by his wife, Lottie; two sons, Paul, of San Francisco and John, of West Point, a sister, Eunice Steis of Johnsonburg; and three grandchildren. JAMES GEORGE CLARK, 69, of Zephyrhills died Sunday. He had lived in the area for 17 years, coming from Chenango Forks, N.Y. He was a retired letter carrier for the postal service, a World War II Veteran, a member of St. Joseph's Catholic Church and a member of the Disabled American Veterans. He is survived by two daughters, Patricia Burnette and Karen Weber; one sister, Frances Kime of Scranton, and five grandchildren.

Kelly Funeral Home is in charge of arrangements. RONALD L. CONGERSLEV, 48, of New Port Richey died Thursday. He moved to this area 10 years ago from his native Moline, Ill. He was a psychologist and social worker and a member of the Doric Masonic Lodge in Moline.
