Pineapple Swee' Sour Sauce with Sausage—(Yield: 5 esrvings) One-half pound porlc sausage, 1 No. 1 tall can pineapple chunks, 'A cup lemon juice, y 3 cup water, % cup brown sugar, y? teaspoon dry mustard, 1 tablespoon corn> starch. Drain pineapple and combine '/ 2 cup pineapple juice, lemon juice, water, sugar, mustard and cornstarch. Stir and boil to thicken, about 5 minutes. Add pineapple chunks. Brown the sausage 3 minutes. Pour pineapple sauce over sausage. Heat. Stir in chill sauce, Worcestershire sauce, and Juice drained from canned beans. Stir and cook over low heat until thick. Add the sausages and beans. Stir. Serve hot. Sausage Cheese Casserole (Yield: 6 servings) One pound pure pork sausags meat, 1 small clove garlic, minced, 2 4-ounce cans tomato sauce, V, teaspoon salt, 1 6-ounce package noodles, l>/ 2 cups (13 ounces) creamed cottage cheese, 6 slices process cheese. Stir and cook sausage In a larga skillet until the pink color disappears. Drain. Add garlic, tomato sauce, and salt to sausage. Cook noodles in boiling salted water until tender. Drain and rinse in cold water. Place half the noodles in 10x6x1 i-i-inch baking dish. Spread half the cottage cheese over noodles. Add a layer of sliced cheese and half the meat mixture. Repeat layers. Bake in a moderate (325 degree F.) oven 30 minutes. Vegetable Medley for Winter Dish Thte vegetable medley may b* served as is or with a cream sauce. Ingredients: 1 % cups coarsely shredded cabbage, 1 cup diced carrots, £ cup diced celery, % cup diced onion, H cup boiling water, 94 teaspoon salt, 2 tablespoons butter or margarine. ..Method: Mix caooage, carrot, celery and onion together in & saucepan. Add boiling water, salt and butter. Cover and bring quickly to a boil; lift cover and stir several times as vegetables boil gently until just tender-crisp. Serve at once. Makes 4 servings. (Save any vegetable cooking liquid for use in soup or sauce.) Seafood Crunch Casserole Ingredients: 1 can (10 ounces) frozen condensed cream of shrimp soup, 1 ; 4 cup mayonnaise, 1 c£p crushed potato chips~~T can (612 ounces) crab meat (drained and flaked), 1 cup diced celery, 1,2 cup diced onion, 1!2 cup diced green pepper. 1 teaspoon Worcestershire Sauce, Method: Thaw shrimp soup; mix well with mayonnaise. Add 34 cup crushed potato chips and remaining ingredients; stir well. Turn into greased 1 1^2-quart casserole; top with remaining 1J4 cup crushed chips.
