Grated Apple Makes This Cake Top Treat By GATNOR MADDOX NBA Food and Markets Editor Picture this after the Thanksgiving turkey — a moist flavorful grated fresh apple cake topped with either ice cream and caramel sauce, or lemon sauce and whipped cream. The recipe comes from Mrs. John M. Bloxom of Yakima, Washington. She is the wife of a prominent apple and pear grower, R sportsman and a terrific cook, according to her husband. These recipes prove he is right. Grated Fresh Apple Cake (Yield: 9 servings) Two cups sifted all-purpose flour, 1V 4 cups light brown sugar, 1 teaspoon salt, 1 teaspoon soda, 1 teaspoon double-acting baking powder, 14 teaspoon ground nutmeg, \'-z cup shortening, 1!£ cups coarsely grated raw apples, 2 tablespoons milk, 2 eggs. Sift the first six ingredients Into a mixing bowl. Add shortening, grated apple and milk. Mix just enough to dampen the ingredients. Then, beat 2 minutes by hand or with an electric beater at low speed. Add eggs. Beat 2 more minutes at low speed. Pour batter into a well-greased, lightly floured, 6- cup ring mold. Bake 50 minutes, or until done, in a preheated moderate oven (350 degrees F.). Or, if desired, bake in a well-greased, lightly floured 9-inch square pan for 45 minutes. Turn out on a wire rack. Serve cold with ice cream and caramel sauce or top with lemon sauce and whipped cream. Mashed Carrots and Potatoes {Yield: 6 servings) One pound (about 11 medium) fresh carrots, \k pound (2 medium) potatoes, 1-inch boiling water in saucepan, ^ teaspoons salt. & teaspoon ground black pepper, 2 tablespoons butter or margarine, 1 cooked, grated. Pare carrots and potatoes and cut each into quarters. Place in a saucepan along with one-inch boiling water and salt. Cover. Boil until tender, 10 to 12 minutes. Remove from heat and mash until fluffy. Beat in the next three ingredients. Garnish with grated uncooked carrot. G. 0.
