CRANBERRY SAUCE CAKE Vi cups whole cranberry sauce 1 cup chopped walnuts 1 cup real mayonnaise Grated rind of 1 orange Vs cup orange juice 3 cups sifted flour cups sugar 1 teaspoon baking soda 1 teaspoon salt Lightly grease 9-inch tube pan and line bottom with brown paper.

Combine cranberry sauce, walnuts, mayonnaise, orange rind and juice in mixing bowl. Sift flour, sugar, baking soda and salt on top. Stir until mixture is well blended. Pour into prepared tube pan. Bake in 350 deg.

F. (moderate) oven until cake tests done, about 1 hour and 15 minutes. Cool, then frost. To prepare frosting: Cream 2 tablespoons margarine. Add 2 cups sifted confectioners sugar and cup whole cranberry sance.

Beat until creamy. For a dinner party or buffet for eight or ten guests there's no nicer dessert than a pretty cake to be served with ice cream or sherbet. No last minute fussing with this dessert plan, especially when the cake is one that can be baked a day or so ahead and stored in the refrigerator. Completely new in conception is the Cranberry-Mayonnaise cake offered. True, many of us have learned that delicious cakes can be made with mayonnaise used instead of eggs and an ordinary shortening.

Most of us have tried date-and-nut and chocolate mayonnaise cakes. The mincemeat-mayonnaise one came along more recently and now here is the cranberry version to take advantage of the fact that good canned whole-cranberry sauce is available the year around. What a nice surprise to find it in a summery dessert as a change from the usual main dish accompaniment. It requires two cups of sugar, one-half cup lemon juice, one-half teaspoon salt, five to six bananas. Combine sugar, lemon juice and salt in saucepan and boil for five minutes. Peel bananas and slice into sugar syrup, Btirring constantly until mixture boils again. Reduce heat to just boiling. Cook until mixture thickens (15 to 20 minutes) Btirring occasionally.
