In Japan, Iwabuchi, 26, ate the meal only occasionally. But when he realized that Americans qouldn't seem to get enough of the Irice and fish dishes, Iwabuchi deeded to open a sushi bar. He and his wife, Carolyn Wild-Jman-Iwabuchi, moved to Tampa irom California two years ago, and opened Kaisen Sushi in Carroll-wood in January. The small restaurant offers sushi meals as well as some teriyaki items.

Last month, County commissioners approved an alcoholic beverage for the business in the Mission Bell shopping center to sell and beer. I "Tampa is an open spot for the sushi crowd," said Iwabuchi, who began working in restaurants at age 16. "This is, a neighborhood business, and we share customers 'with the theaters and the pub next Idpor. We're already building up a Jot of regular customers who had never tried sushi before." Iwabuchi wants people to realize that "sushi" does not refer to Jraw fish. Sushi, in fact, is the term for the Japanese tradition of preparing rice with vinegar and herbs.

"We're not greedy, we aren't looking to expand right away," Iwabuchi said. "Right now the restaurant is still a baby. Our goal is to introduce the people in Tampa to sushi." Kaisen Sushi is closed Tuesdays, and is open for lunch Monday through Friday from 11:30 a.m. to 2:30 p.m.; and for dinner Monday through Thursday from 5 p.m. to 11 p.m.; on Friday from 5 p.m.
