PAGE TEN Oven - Fried Chicken For Party Easy to Fix By GAWOR MADDOX | NEA Food and Markets Editor To make .hings more pleasant for yourself and your guests, use your oven to finish frying the chicken for your dinner party. Party Fried Chicken Two chickens for frying, 2 cups flour 2 tablespoons salt. 2 eggs, 1 cup milk, 3 pounds shortening for frying. Have chickens drawn and cut | into serving pieces, or, if quick- frozen, thaw according to directions on box. Rinse in cold water and dry. Use drumsticks, thighs, and breast pieces, the remaining pieces will make an excellent recond day dish. Dip pieces of chicken into flour and salt sifted together, then into eggs beat -i "ith milk, then again into flour. Melt shortening in a heavy kettle to 350 degrees P (cube of bread browns in 60 seconds). Lower pieces of chicken into kettle. The temperature of the shortening will drop to 300 degrees F. As the frying continues, the temperature, of the shortening should rise but not over 350 degrees F. F:v for 7 to 8 minutes, depending upon size of pieces of chicken, until crisp and browned. Place on a rack in a flat pan. Put about Vz inch hot water in the bottom of the pan and place in a slow oven (300 degrees F.) for 40 minutes or until tender. This method allows chicken to be prepared in advance. There's another good way to cook chicken. ,What we do at home: have frying chickens cut into 4 pieces. Wash, dry, season with salt, pepper and paprika. Place in greased roasting pan and dot generously with butter. Slice a whole onion into bottom of pan. Place in moderate oven (350 degrees F.) and bake for 1 hour or until tender. Turn and barte frequently, adding more butler when needed. That's all there is to it — Beautifully browned, tender and delicate!; flavored. Quick Raisin Cookies Biscuit mix makes Jigtime drop cookies for small fry. Ingredients: 1 2 cup light or dart raisns, 14 cup shortening, 1 1 cups biscuit mix. 34 cup flrmly- pavked brown sugar, 1 egg. 3 tablespoons milk, 12 teaspoon vanilla. Method: Rinse and drain raisins Melt shortening and allow to cool while measuring remaining ingredients. Stir biscuit mix. sugar and raisins together. Beat egg lightly; stir in cooled melted shoretning, milk and vanilla. Stir into dry mixture well. Drop by teaspoonfuls onto greased baking sheet, allowing n couple of inches between cookies. Bake in moderate (375 degrees) oven 10 to 12 minutes. Remove to wire rack to cool. Makes about 40 cookies. Quick pie: line a pie plate witn lady fingers and fill with a gelatin chiffon mixture. Chill and top with whipped cream before serving If you are using an orange flavored filling, garnish the whipper cream with shaved chocolate.
