Cool; cover and chill. Serve chilled pudding with warm Maple Pear Sauce. Makes four servings MAPLE PEAR SAUCE 1 tablespoon cornstarch 2 tablespoons light brown sugar, packed Vz cup cold water Vt cup maple syrup 1 tablespoon lemon juice 2 tablespoons butter 2 fresh Bartlett pears In a one-quart saucepan thoroughly stir together the cornstarch and sugar. Gradually stir in water, keeping smooth. Stir in maple syrup.

Cook over moderate heat, stirring constantly, until thickened and boiling. Remove from heat. Add lemon juice and butter stir until butter melts. Pare, halve and core pears; slice them into the hot sauce. Pears are not cooked; they give delicious fresh flavor added in this fashion.
