PAGE ELEVEN Fireplace Picnic Good Autumn Supper Idea By CECILY BROWNSTONE Associated Prow Food Editor A FIREPLACE PICNIC is perfect for an Indian Summer supper! Make*, these wonderfully delicious stuffed rolls in -the morning, wrap them in aluminum foil and refrigerate them until the gang arrives. Then .while family and friends are sipping tomato juice, heat the rolls in the oven. Open some canned beans, season them creatively and heat them on top of the range; turn them into your best-bean pot or casserole and top with crisp bacon. With" the cheese rolls and beans, bring- on corn on the cob—fresh or frozen. For dessert, cookies with milk or coffee and a bowl of fall fruit. Or if your picnic includes teenagers, you might make dessert an ice- cream soda—their favorite "Black Cow." • Arrange this easy-do supper on a buffet table near your fireplace. Let the gang draw up chairs, help themselves. - Good food, good talk CHEESE AND HAM STUFFED ROLLS INGREDIENTS: 2 cups shredded Cheddar cheese, 1 cup ground cooked ham, 6 tablespoons mayonnaise or cooked salad dressing, V* cup chopped sweet cucumber pickle, 1 tablespoon finely grated onion, l teaspoon Worcestershire sauce, salt and pepper, 6 to 8 frankfurter rolls, soft butter. METHOD: Mix together cheese, ham, mayonnaise; pickle, onion and Worcestershire; season to taste with salt and pepper. Cut slice off the top of each roll; scoop out center. (Dry the scooped-out crumbs and save for use in poultry stuffing.') Spread inside of scooped-out rolls with butter. Pill hollow of each roll with cheese mixture; replace top. (Wrap each roll. in aluminum foil; lefrigerate. Before serving put them in a moderate oven until they are hot through. Serve in wrappers. Often, some tell us, they use them for parties, too. Mrs. Arthar Ivey, of- Pound Ridge, N. Y., cover girl model, mother of two-year-old Juliane, arrives home at 7:30 p. m. She serves her husband and self" easy- to-prepare dishes and uses paper plates. Even Juliane gets much a of her food in pamper bowls. For informal party buffets, Mrs. Ivey says, she .uses one of her favorites — a colonial design in bright red, blue and green, with matching cups. For more formal meals, she chooses one of the solid color^, coppery-toned plates, a flowered 1 design or one of the new chinalike plates, subtly decorated in pastel-tones. When it's just for the family for quick breakfasts and leisurely dinners, it's generally pastel-colored plates with nine-inchers for the entree, six-inchers for bread and butter and seven or eight- inchers for dessert. Whatever the occasion, color and pattern, they're alike in practicality. One of her favorite menus for both family and informal gatherings: Golden brown fried chicken- in-a-basket (she buys it frozen ready for preparation), a * tossed salad and hot blue cheese bread. Cfiffee and fresh fruit complete the meal. Hot Blue Cheese Bread (Makes 16 servings) One loaf unsliced white- bread, J/2 cup crumbled American blue cheese (about. y 4 pound), 3 tablespoons softened butter or margarine, 3 tablespoons milk, y 4 cup softened butter or margarine. Cut bread down t -h e center lengthwise without cutting all the way through. Cut crosswise in 1- inch slices without cutting all the way through. Combine cheese, 3 tablespoons butter or margarine and milk; mix until well blended. Spread cheese mixture "on all cut surfaces of bread. Spread.% cut softened butter- or margarine on outside surfaces of loaf. Wrap tightly in aluminum foil and bake in hot oven (400 degrees F.) 15 minutes. Serve immediately. Mace Gives Novel Flavor To Pudding This light- : fluffy Cottage pudding is intriguingly flavored -with mace. MACE COTTAGE PUDDING Ingredients: 1% cups sifted cake flour, . 2 teaspoons double-acting baking powder, y 4 teaspoon salt, % teaspoon mace, V 4 cup butter or niargarine, % cup sugar, 1 egg, % cup milk. Method: Sift together the flour, baking- powder, salt and mace. Cream butter and sugar; beat in egg thoroughly. Stir in sifted dry ingredients in 3 additions, alternately with milk; have dry ingredients moistened each time but do not stir until smooth. Turn into buttered loaf pan (about 8 by 4 by 2 y 2 inches); bake in moderate (375 degrees) oven 2 to 30 minutes or until tester inserted in center comes out clean. Turn out on board. Cut into thick slices and serve warm with Lemon Sauce. Makes 6 to 8 servings. The hospital couldn't rightfully put up a bench at the bus stop, so Shorty's passengers often had a "standing wait." But they didn't stand long. Second day on the job Shorty brought along some old lumber for a bench. Next trip out he put it together. That was fine, but the next day it rained. Another fellow who deserves recognition for his thinking of his customers is ' Andy, who owns the Garden Tavern. Andy voluntarily co-operates with the Brewing Industry by following- their Self-Regulation Program, for instance. He knows that the whole community appreciates a clean, wholesome place to "stop" in. Lentz Milk Important In School Lunch It Should Supply One-Third of Daily Nutritional Needs By GAY-YOR MADDOX With the opening of school, lunch for youngsters becomes vitally important to health and stamina. It "should supply about a third of the child's daily nutritional needs. That's the standard required of schools serving: Type A lunches under the government's National School Lunch Program. We discussed school lunches with •nutritionists of the Seeltest Kitchens in New .York and with home economists in charge of various school lunch programs. They all state that an adequate milk-fortified lunch, w h e t h e r served at school, at home, or carried in a lunch box, should contain not less than y 2 pint of milk for drinking; '2 ounces lean meat, poultry, fish or cheese or l egg, or y* cup cooked dry beans or peas, or 4 tablespoons peanut butter. Also % cup of vegetables or fruit or both, one or more portions of bread or muffins or other bread made of whole grain cereal or enriched flour, 2 teaspoons butter or fortified margarine. Home-for-Lunch Menus 1. Cup of tomato noodle bisque, {whole wheat bread, butter or margarine, peach, pear and cottage cheese salad, raisin crackers, milk. 2. Broiled tiny hamburger, toasted hamburger bun, butter or margarine, sliced tomato salad, hasty peanut pudding, milk. 3.
