The rice, ptmiento and cheese make 'his easy oven main dish unusual enough tor your special guests. Ingredients: 1 cup uncooked white ric« 1 teaspoon salt 2 cups water 2/3 cup sliced ripe olives V4 teaspoon salt !4 teaspoon black pepper 1 cup grated American cheese 3 tablespoons chopped plmlento % cup liquor, drained from oysters (add water if necessary to make 3 /i cup) 1 pint oysters METHOD: Put the rice, salt and water in a 2-quart saucepan. Bring to a vigorous boil. Turn the heat as low as possible. Cover with a lid and leave over this low heat 14 minutes. Remove saucepan from heat but leave lid on 10 minutes. Cut the olives from their pits and into large pieces. Mix together the olives, cooked rice, salt, pepper, half of the cheese, plmientos and liquor from oysters. Place half of the rice mixture in a greased 2- quart baking dish. Top with the j oysters. Add the remaining rice mixture. Sprinkle with the rest of the cheese. Bake in a 350 degree F. oven 15 minutes or .until heated through and until the cheese is brown. This recipe makes 6 servings. Orange Sweet Potatoes Kroger Plum 12 oz. Ingredients: 1 can (1 pound and J ounces) sweet potatoes. 2 i;4 teaspoons cornstarch, 14 cup firmLy- packed dark brown sugar, 1 teaspoon orange rind, 3|4 cup orange juice, 1 tablespoon butter or margarine. ' L Method: Cut potatoes in half lengthwise; arrange In a heat-resistant glass pie plate (B 1>2 inches across the top Inside and 1 Ij2 inches deep). Stir cornstarch and sugars together thorouhly in 1-quart saucepan; add orange rind and orange Juice gradually, stirring until there are no lumps. Stir constantly over moderate heat until thickened; cook a few minute* longer. Remove from heat and stir in butter until melted. Pour over sweet potatoes. Bake In moderate (350 degrees) oven 20 minutes. Makes 6 servings. Grilled Cheese And Relish Sandwiches Ingredients: For each sandwich— 2 slices bread, 1 slice sharp cheddar cheese, 1 tablespoon sweet pickle relish, 1 tablespoon butter (soft). Method: Put the cheese on a slice of bread; spread pickle relish over the other slice and arrange over cheese. Spread top side of sandwich with IB tablespoon soft butter; brown, butter side down, in hot heavy iron skillet. While this side of sandwich i» browning, spread remaining 1|2 tablespoon butter on upper side of sandwich before turning to brown. Out in half and serve nt once.
