SUMMER FARE Delicious, delightful, deceptively easy, these specialty dishes are no- care convenient. This summer menu is planned around a super supper idea of sea kabobs latticed with green pepper cubes, cherry tomatoes and accompanied by Risotta Rice. Pickled fruit complete this light and luscious special supper. A Sybaritic Dinner Straight from the Sea So summer right, are menus planned around simple and delicious foods. Menus that often speak "simplicity" demand a girl knowledgeable about nutrition and aware of the obtainable cleverness of convenience foods.

With so much emphasis on convenience, eating habits and weight control, a summer menu has been devised that satisfies these requirements, and is simply delicious for either company or that very special family of yours. Fish, high in protein and low in calories, kicks off this dinner and initiates its eaters that they're in for something special. Threaded to an unusual twist on skewers and barbecued on the these sea kabobs are just as delicious grilled indoors or out. Scallops and shrimp are woven between cherry tomatoes and green pepper cubes and then bedded down to savor on Italian style Risotta Rice. A perfect accompaniment, Risotta Rice is nutritious, yet light with just the correct amount of space to savor with it's sea neighbors.

Right from the box, Risotta Rice's flavorful blend of spices is just right with shrimp and scallops. Sprinkled with a seafood seasoning of herbs, these kabobs can be prepared a day ahead of time and then kept in the refrigerator until you're ready to cook them. All that needs to be done that evening is to remove the sea kabobs from the refrigerator, grill and then wait for the raves. Sweet pickled watermelon, cantaloupe and honeydew, fancy mandarin orange segements, and melon balls further enhance your summer selectivity of light-tasting accompaniments. Yet I've somehow accumulated a collection of cuff links. In order to get some use out of these cuff links, I decided to convert half of my shirts from barrel cuffs to French cuffs. So I took them down to a place that makes buttonholes and had them remove the button on the barrel cuff and replace it with a buttonhole. Now I just put the two buttonholes together and slip in the cuff links. You can't tell the difference.

Bill Well, Billy boy, I think you've made a hole in one! Your idea is absolutely the most, and we hope you'll keep us in mind when you come up with another grand slam! year. You have kept me well- informed, So hugs to you from Vaughan Dear Heloise: My husband bought himself an inexpensive plastic twist-out ice cube tray to use as a palette. It's lightweight and has several spaces for different colors. He made a cardboard cover to lay over it so he can put his brushes on top without getting paint on the handles. It's really ideal easy enough to clean out one section with a rag and brush if necessary, but usually he just adds light or dark colors to make a different shade.

and George That's a really "cool" idea, I'd say, friends. Thanks for letting us in on it. Dear Heloise: If you have leftover cake that's unfrosted and it doesn't seem to be "selling" too fast: Take crushed pineapple, remove some of the juice and add a bit of sugar to it. Also have on hand some whipped cream. Now make a layer of cake, then a layer of pineapple, then whipped cream.

Let this set overnight and do not freeze just keep in the refrigerator. Serve in squares and you'll find yourselves in for a real treat! (I added cherries to the pineapple for color.) James Hawkin Dear Heloise: My four-year-old decorates his own wrapping paper for his friends' birthday presents. After wrapping the gift with white shelf paper, it's fun to decorate the paper with felt pens, crayons, paints, or pictures cut from magazines. He decorates most of his with the number "4" in all different sizes, as that is the age most of his friends are. Please give him "4" BIG kisses from his Aunt Heloise for this darling hint.
