CHOCOLATE CHIP LIME PIE Pie Crust: cup sifted enriched flour Vt salt cup shortening Vt cup rolled cats (quick or old fashioned, uncooked) 1 ounce (1 square) semi-sweet chocolate, shaved 3 to 4 tablespoons cold water Filling: 1 envelope unflavored gelatine cup cold water 3gg yolks Vt cup sugar Grated rind of 1 lime Vi cup lime juice 3 egg whites- Vt cup whipping cream Is cup sugar Topping: Vt cup whipping cream, whipped Heat oven to hot (425 degrees), ''or pie crust, sift together flour and salt.

Cut in shortening until mixture resembles coarse ci umbs; add rolled oats and chocolate; mix lightly. Add water a little at a time, stirring until pastry can be formed into a ball. Turn out on lightly floureo board or canvas; knead gently a few seconds. Roll dough to form 12-inch circle; fit loosely into a 9 or 10-inch pie plate. Fold edge under; flute.

Prick bottom and sides well. Bake in preheated oven (425 degrees) about 15 minutes. Cool. For filling, soften gelatine in cold water. In a saucepan mix together softened gelatine, egg yolks, sugar, grated lime rind and lime juice.

Cook over very low heat (may use double boiler) until thickened, stirring constantly. Remove from heat. Cool until partially set. Beat egg whites until stiff. Whip cream until frothy; add sugar gradually and beat until stiff.

Fold lime mixture into egg whites; then fold in whipped cream. Pour into cooled baked pie shell. Chill several hours. Before serving, garnish with whipped cream. Manes 1 9-inch pie.

For lazy summer days or for a special company brunch, there's a neat way of combining the fruit with the main dish by serving nut waffles with a fresh peach sauce. Even chopped nut may be added to the batter for a pleasant surprise.
