That's good budget news, "and we should do something about it. Veal has delicate texture and a mild flavor. It calls for subtly seasoned sauces. The Italians, French and Hungarians are artists with veal. We've modified a French recipe for veal with onion sauce. You'll like it, particularly now that veal Is so plentiful and therefore more reasonable. As many veal dishes call for cutlets, or thin slices, you may find that the frozen veal cutlets In either the Frenched or un- Frenched styles are cut just right for these dishes. Veal In Onion Sauc* (Yield: 4 servings) Pour veal cutlets, 1 cup thinly sliced onion, 2 tablespoons fat, 1 tablespoon prepared mustard, '/ 4 teaspoon horseradish, 1 teaspoon salt, Y B teaspoon pepper, 2 lable- poon lemon juice, % cup chicken bouillon, 1 tablespoon cornstarch.
