The Four Seasons Ocean Grand's director of restaurants and bars, Christophe LeChatton, was with Truffles, the restaurant at Four Seasons Toronto, when it received Canada's only AAA Five Diamond dining award in 1994.

Restaurants and hotels approved by AAA undergo a rigorous annual inspection and receive an overall rating of one to five diamonds. About 31,000 establishments inspected this year will be listed in AAA's 1996 travel guides. The rankings are important to restaurants and hotels, which are continuously looking for improvements, as well as travelers who consult the guides for dining and lodging. The Breakers' CEO, Paul Leone, hopes the hotel will not only earn back its fifth diamond, but exceed AAA's standards. The Breakers completed a five-year, $75 million renovation last No vember in hopes of regaining its fifth diamond in time for the hotel's 100th anniversary, which begins in January.

"When the inspections for these awards were undertaken during 1995, the hotel was still undergoing a major rooms renovation, which precluded us from achieving the highest ratings," Leone said Tuesday. "We look forward to the 1996 inspections and fully anticipate achieving unanimous recognition as one of the finest resorts in America." In 1995, AAA awarded four diamonds to Cafe L'Europe, The Ritz-Carlton, The Grill at The Ritz, as well as the Four Seasons Ocean Grand and its restaurant. Mobil Travel Guide, another highly regarded ranking, gave its highly coveted Four Star Award to The Brazilian Court, The Breakers, Cafe L'Europe, The Chesterfield hotel and The Ritz-Carlton in 1995. Both AAA and Mobil will keep their awards secret until late December when complete listings are released. ELIOT HOUSE has not been released, sources at the Four Seasons Ocean Grand said The Restaurant is the only South Florida restaurant and one of only 31 nationwide to be honored with five diamonds.
