fWMD'AY, Dressed Beef Round Is Sunday Special Marlon W. Plexner of LoutevMtt, Kentucky, is known for her Informal hospitality and really delightful dishes. Ic her new "Coek- tail-Supper Cookbook" she gives 50 menus and 320 recipes lor planned- ahead and cooked-ahead food. It's one of the best help* to «!• tertaining with ease and pleasure we've seen in a long time. We particularly like this recipe for round steak. Remember, too, that cuts like round should be inexpensive now. Dressed Beef Round (I to Z wrvlnci) .Eight to 12 pounds beef cut from the round, cider, vinegar, stlt and pepper, 2 cups water, 2 tablespoons walnut catsup, 4 tablespoons Worcestershire sauce, 14 cup sherry, if desired. The day before cooking, select a thick, not-too-wide, piece of beef. Have butcher lard it with fresh pork, cut deep gashes to hold dressing, tie and trim well. Rub beef with vinegar. Stuff Special Dressing into slits and cover top and sides, tet season overnight. To roast, place uncovered in » moderate oven (350 degrees P. Sprinkle with pepper and a little salt. (Dressing is ealty). Let brown all over, then add water, cover and cook until tender— about 4 hours. Baste occasionally.. Half an hour before serving, add walnut catsup and Worcestershire. (Thicken gravy if you want with a flour and water paste). Just before bringing to the table stir in sherry, if desired. Pass gravy separately. Special Dresslnj for Dreisei Beef Round The following recipe is > double amount. You can serve the extra instead of a starchy vegetable. Two 1-pound loaves white bread, 2 large onions, peeled and sliced: 1 cloves garlic. 1 cups beef suet 4 carrots, scraped; Va cup sour pickles. 2 teaspoons mixed spices, 2 teaspoons celery seed, 1 cup mustard pickle, 1 cup tomato sauce or catsup. \>i cup chili sauce. 2 tablespoons French mustard, salt and pepper. Tabasco. Use day-old bread. Leave uncovered overnight. Grind with finest blade of meat grinder. (If bread is too moist, dry In a 360 degree F. oven.) Grind onions, garlic, suet, carrots and pickles if in large pieces, Add other ingredients. This should make a fairly stiff paste, but not dry.
