By GAYNOR MADDOX NEA Food and Markets Editor From Chicago, katherine B Niles, distinguished poultry recipe expert, sends enthusiastic reports on her newest recipe, Penny wise Chicken Casserole. It will save pennies, she says, and it tastes wonderful. She says this dish is a mint of good eating, and she adds that broiler-fryers will satisfy robust fall appetites. There is economy, too, in the preparation. The foods are simply arranged in three layers and left to bake in an aromatic vinegar sauce. The chicken cooks to a rich brown as it bakes No pre-browning is necessary. The crispness of the green cabbage comes from large Hi-Inch wedges which cook to just the desired doneness by the time the chicken is done. Leave the autumn-red skin on the apple rings and cut them at least half an inch! thick. This way the apples will keep their appetizing appearance. Pennywlse Chicken Casserole (Makes 4-6 servings) One broiler-fryer chicken (2-2!/ 2 pound)-cut up, 1 small head cabbage cut Into Ua-inch wedges, 4 tart red apples cut in ',-srinch rings, cut in i^-inch rings, unpeeled; 2 teaspoons flour, > 2 cup vinegar, 1 tablespoon salt, 2 tablespoons butter or margarine, melted. Place cabbage in bottom of shallow 2-quart casserole. Sprinkle with 1 teaspoon of the flour. Make a layer of the apple rings. Sprinkle with remaining Hour. Top with chicken pieces, skin side up. Brush chicken 'surface with melted butter or margarine. Combine vinegar and salt. Pour over chicken. Cover casserole. Bake in a mod- j erate oven (350 degrees F.) 45 minutes. Remove cover. Baste chicken with juices in bottom casserole as needed to moisten chicken. Bake, uncovered, 30 minutes or until chicken is well browned and meaty pieces are fork-tender. Combine Meat Balls With Coconut Chips By GAYN'OR MADDOX NEA Food and Markets Editor Here's a novel combination — meat bails and the new shredded coconut. Mrs. Harry Schrey of Monrovia, Calif., thought it up. She says not only she, her husband and three little boys rate it "super,'' but her guests do, also. Meat Balls West Coast (Makes 4 servings) Two cups sliced green peppers, 2 tablespoons flour, l / 2 teaspoon salt, '/a teaspoon pepper, 1 egg, 1 pound ground beef, 34 to 1 cup new shredded coconut, H cup oil, 1 teaspoon salt, 1 small clo> r e garlic, finely minced; 1 .cup chicken broth (or 1 chicken bouillon cube dissolved in 1 cup of boiling water), 1 1-3 cups (5-ounce package) packaged pre-cooked rice, Va teaspoon 6alt, l l /-z cups boiling water, 2|i tablespoons cornstarch. 1 tablespoon soy sauce, !2 cup vinegar, l ,z cup sugar, 1 cup fresh orange sections. Cook green peppers in small amount of salted water 2 to 3 minutes. Drain and set aside. Mix together flour and l ' z teaspoon salt. Pepper and combine with egg to make a batter. Shape'ground beef into 16 small balls. Thoroughly coat' meat balls with batter, then roll i". coconut. Heat oil and 1 teaspoon of sale in skillet. Add minced garlic. Drop meat balls, one at a time, into hot oil in skillet and brown lightly on all sides. Remove all but 1 tablespoon of the_ fat. Add Va cup of the chicken broth. Cover skillet tightly. Simmer over low heat for about 10 minutes. Meanwhile, add packaged precooked rice and % teaspoon salt to boiling water in saucepan. Mix just to moisten all rice. Cover and remove from heat. Let stand 13 minutes, lend the cornstarch, soy sauce, vinegar and sugar with the remaining 2-3 cup meat balls. Add green peppers and orange sections. Stir until the sauce Is thickened, about 5 minutes. Arrange rice on platter and surround with meat balls and sauce.
