LAST YEAR'S DAIRY BABY — It was early in ih« morning when Edwin Lamar Petry, 1, took ibis picture and he hadn't gotten around to smiling, especially for a strange photographer. However, Edwin, who was last year's first baby born in a local hospital in June, is an excellent example of the advantages one gels from milk. He is the son of Mr. and Mrs. Kenneth Petry of West Lake and received a year's supply of milk beginning last June in celebration of June Dairy Month. Ice Cream Cone Novelty in 1904 "Meet me in St. Louis, Louis. Meet me at the Fair!" And those who met there, in St. Louis, 60 years ago, may have treated themselves to that sensational new food novelty, the ice cream cone. The St. Louis World's Fair ground was the birthplace of the ice cream cone. Born of necessity at a pastry stand located next to an ice cream booth, the cone today really belongs. . Ernest A. Hamwi of Damascus, Syria, is credited with ? originating the first cone holder for ice cream. He had a concession at the St. Louis Fair to sell Zalabia, a crisp wafer- like pastry baked on a flat waffle iron and served thin with sugar or other sweets. ,'. One day when the ice cream booth ran out of dishes, Hamwi > quickly rolled one of the thin Zalabias in the shape of a cone, '.' or cornucopia. When the cornucopia was filled with ice cream , and served to a delighted cus^ -- tomer, the ice cream cone was " born. The combination cone-shaped pastry and ice cream became known as the World's Fair Corn• ucopia. It wasn't until 1906 that 'the word "cone" instead of "cornucopia" began to identify '• the handy and delicious ice '•; cream container. ;; The modern ice cream cone •developed along two patterns, "the rolled cone and the molded - cone. The rolled product was a baked waffle in round shapo which was at first rolled by hand, later mechanically, as soon as it came off the griddle. In a few seconds, it hardened in the form of the crisp cone as it is known today. The molded cone was shaped on one of two ways: either the bailer was poured into a shell and a core inserted on which the cone was baked, or the cone was formed in a mold which was split so that the cone on the form or pin could be re moved without difficulty. The cup-shaped or short cone was a later development. Dairy farming is the only form of agriculture found in al of the 50 stales. That's the word from the United States Department of Agriculture, and from practically all other expert sources. One goal of June Dairy Month, the nutritionists add, is not merely to promote milk but to promote better diets and bet- er health for millions of Amer- cans. The Council on Food and Nutrition and the USDA have prepared a daily food guide con- slating of a well-balanced diet chosen from the four basic food groups, dairy foods, meat foods, vegetables and fruits, and cereals. Nutritionists, physicians, diet- lians, nurses, and public health officials concur In the listing of milk and dairy products as the Number One basic food group, items from which balance nutritional deficiencies of the other three groups. Calcium is the chemical element found in oyster shells, chalk and limestone. It Is also he most abundant mineral in the body. This vital mineral, along with phosphorus, is essen- .ial for strong bones and sound teeth. It also functions in many bio- ogical processes and is an essential for all cells. Calcium is n e c e s s a r y for ilood-clotting, for stimulation of tho heart beat, for regulation of muscle-nerve responses, and for cell wall permeability. It is likely to be deficient in our diet unless adequate amounts of milk and other dairy products are eaten daily. Milk is the main source of :alcium among foods. The daily mman requirement for calcium is approximately one gram, or about one-twenty-«lghths of an ounce. This is easily supplied by drinking one quart of milk or eating its equivalent in dairy products such as cheese, skim milk, and ice cream, and also other nutrients. One of the most important roles of calcium is the main tenance of bone and tooth strue ture throughout life, regardless ot age. The importance of sitf ficient calcium for mothers, infants, growing children and teenagers for skeletal growth i common knowledge. However, many still believe in the fallacy that calcium i not required by adults. This i not true. Calcium is stored in the skeletal structure and is withdrawn as needed when insufficient calcium intake ocurs. Isotope stud- es with radioactive calcium mve shown that there is a constant exchange between calcium in the blood and calcium in the bone. If the calcium intake Is insufficient, the skeletal system becomes weakened as calcium diffuses out of the bones and! s not replaced. j Butter Gives I i Flavor For All Occasions If "flavor Is the voice of food," as the gourmet's saying goes, then it is butter which gives that voice the full, rich quality which distinguishes the concert soloist from the amateur. In 1848 the first butter factory was established in the United States. Dairy farmers from the countryside surrounding Goshen, N.Y., were invited to bring their milk to the receiving station and to sell it for conversion to butter, rather than for use as a beverage. From that small beginning, the butter industry spread across the nation to become a vital segment of the dairying business. Butter is churned from cream, and one pound of butter represents roughly the amount of cream contained in 10 and one- half to 11 quarts of milk. The only other ingredient 5n butter is a slight amount of salt, \ sparingly blended to bring out| the rich, full flavor of the cream. Milk was the food of fighting men of old. The fierce horsemen of Ghengis Khan who conquered Asia and much of Europe were milk drinkers.
