It's very good eating. Especially "as is" on mixed grtfen .salad. But lots of people like it better in cooked dishes, so let's look at this recipe .from Mrs. Esther Speer of Siratford, Conn. Asparagus Liver Creole {.Makes 4-6 servings) Pour slices bacon, diced; 1 pound calves liver, sliced '4-inch thick; 1 4-ounce can sliced mushrooms, drained; 1 8-ounce can to- Prune Orange Whip Ingredient*: > egj white*, dath of salt, 113 cup sugar, 1 Jar (8 ounces) junior-food prunes, 112 cup heavy cream, grated rind of one orange (about 11|2 teaspoons), membrane free orange sections of 2 oranges. Method: Beat egg whites and salt until peaks that curl over slightly are formed; gradually and thoroughly beat in sugar. Without washing beater, beat cream until stiff enough to hold a peak. Fold prunes and grated orange rind into beaten egg whites; fold in whipped cream. Turn into sherbet glasses. Chill until serving time. Garnish with orange sections. Makes 6 servings. Vi cup chopped watercress. Melt butter or margarine. Add flour and seasonings and blend. Gradually add chicken stock or bouillon, asparagus liquid and milk.
