COURIER NEWS PAGE THIRTEEN Summer Dish: Potato-Stuffed Frankfurter By GAYNOR MADDOX Looking for pleasant summer dishes that are as easy as they are' delicious? Most everybody is these warm days. Well, take a look at these recipes. We picked them up on a weekend in Connecticut. P tato-Stuffed Frankfurters (Sandwich Style) (Yield: 4 servings) Eight skinless frankfurters, 1 cup finely diced cooked potatoes, y 2 teaspoon salt, Ya teaspoon ground black pepper, 4 slices bacon. Heat oven to 450 degrees F. (very hot). Split frankfurters lengthwise almost through to the opposite side. Lay open. Combine potatoes and seasonings and spoon over split fran'-" urters. Top with another split frankfurter, sandwich style. Hold in place with toothpicks. Wrap a strip of bacon around each serving. Bake 15 to 20 minutes or until bacon is crisp. , Note: If oven is set at a temperature lower than 450 degrees F. for another dish, bake the above dish at the same time, until bacon is crisp. Try these with a fresh vegetable plate, with baked fish, or just as is. Potato and Onion Kabobi (Yield: 4 servings) Six uncooked l^-inch potatoes, 6 uncooked lya-inch onions, dash salt, dash ground black pepper, 4 teaspoons butter or margarine, paprika for garnish. Heat oven to 450 degrees F. (very hot). Wash, peel and cut potatoes in half, crosswise. Peel onions and cut in half, crosswise. String potatoes and onions, in kabob style, on skewers. Place on 6-inch piece of aluminum foil. Sprinkle with salt and black pepper ana piace 1 teaspoon butter of margarine on each. Wrap and place in a baking pan. Bake 30 to 40 minutes in a very hot oven (450 degrees F.) Ys pound dandelion greens, & cucumber, sliced ,y 2 cup each, uncooked fresh peas and sliced fresh carrots, Yz cup cooked fresh lima beans, 2 fresh tomatoes, cut in wedges. Arrange salad greens and vegetables in a large salad bowl. Serve with French c 1 jsing. French Dressing (1 cup) Three-fourtns cup salad oil 1 clove garlic, 1 t eapsonm ioencd onion, Yz teaspoon salt, 1 tablespoon sugar, Yz teaspoon powdered dry mustard, Yz teaspoon paprika, Ys teaspoon ground black pepper, 54 cup wine vinegar, 1 tablespoon fresh lemon juice. Soak oil, garlic and onion together for at least 1 hour. Add remaining ingredients. Shake or beat vigorously.
