Wonderful with Beau-joulais. AFTERTHOUGHTS: Charlotte's coq au vin can be made the day before and reheated. For calorie-counters, remove congealed layer that forms on the top before reheating in slow oven. For nice touch, cut 1 or 2 bunches of peeled carrots into pieces, 1 V4 inches long. Round off edges of carrot pieces to form miniature carrots.

Cook carrots in boiled salted water until barely tender. Add to casserole with remaining ingredients before baking. She is separated from her husband, John Strauss, but now lives contentedly with her son Larry, a writer. We were having afternoon coffee and pastries by the pool in her beautiful backyard.

Nearby her two cats lazed in the sun. "When I first came to Los Angeles it seemed unreal after New York like papier mache. I couldn't believe it. I fell in love with the place. I was so warmed, loved and comfortable here.

The people are so friendly. I entertain at home more than I ever did in New York." She enjoys the easy, relazed atmosphere of her open, indoor-outdoor house. The living room looks out on the pool and a wide terrace where guests can sit and relax. Friends like to gather in the dining room and the adjoining sunny lemon-colored kitchen. "When I have an informal party guests help themselves in the kitchen," she told me.

Charlotte's menu: California green salad, stuffed baked red snapper, beets and beet greens, fruit salad and cookies. "I don't spend too much time in the kitchen because I'd never be able to get out from all the tasting," she joked. A gracious hostess, Charlotte does much of the preparation herself. Her stuffed fish was her own creation. "I made it up and sauteed the mushrooms, onions and celery before adding bread crumbs, herbs and crab meat.

It was delicious." She cooked it in a fish poacher, basting it often to keep the fish moist. "I really had too much to eat, but it was fun. I like to entertain about eight people. I've taught my cleaning lady how to cut and dice food, and I let her do some of the heavy work. I don't have a Cuisinart but maybe one day I will.

Charlotte likes to shop at the nearby Brentwood Country Mart. She even goes to a special shop to find her favorite blend of coffee a reminder of when she lived in New York on the West Side in an old apartment on Riverside Drive and frequented certain shops. She recalled a special dinner she fixed in New York for otd friend Max Gordon. "Max and his wife came to our house just before we came to California. He said I made the best coqau vin." Charlotte likes to share her home with friends who live in apartments.

"I open my house when they want to have a party. It's just great. We had a big cast party here and fried hamburgers outdoors. I had a big birthday cake for Gary's mother and Louis," she said, referring to Gary Coleman and Louis Smallwood, who tutors the three kids on Diff'rent Strokes. The kids surprised Charlotte by giving her a pair of roller skates.

"I feel younger than I have in years. I started skating with the kids in one of the studio rehearsal halls. We're going to go skating in Venice one day." Roller skating on the boardwalk in Venice has become a popular craze in California with both young and old, including many celebrities. Charlotte is a very spiritual person who reads and meditates every day. "Loving friends and growing as a person are awfully exciting.

All of it gives me great peace," she said, looking over at the trees and nearby plants. "Fm learning to be comfortable, how to go with the flow of life. Change is one thing that is certain. If you nave to cling to something, forget it. Everything changes.

"I remember when I first came out here, I touched a palm tree to see if it would fall over. I wasn't used to a tropical paradise like Southern California. I'm from Milwaukee, and I can remember I used to look down from my second-story window where we lived to see the trees in bloom. I loved it in the spring. And in New York, I loved it when the snow fell and made everything look like a small village.

Then everyone touched and said hello. "When we lived on the West Side, I organized a block association because I couldn't stand people going in and out of the apartment house every day and never speaking or getting acquainted. "Now I have a plum tree. I call it God's plum tree. I see it every morning when I have my morning coffee.

My only problem is being able to accept all this beauty that's around me. It's overwhelming. It has to do with gratitude, being alive, being well, being able to enjoy the extraordinary beauty of nature. I'm in awe and it makes me feel terrific." The Miss Teen Eastern Pennsylvania pageant will be held Aug. 25 at Widener College, Chester, and the Miss Teen Western Pennsylvania pageant will be staged Aug. 19 in Butler. Judging is based on poise, personality, physical appearance and achievement in community and school activities. There is no talent competition.
