very thlok and a generous portion Is oftsn considered a sufficiently hearty dish for a whole meal The foundation of a cream soup Is a thin white sauce and cooked vegetable pulp or puree Is added for flavor Plan In advance to cook sufficient vegetables at a previous meal to prepare these eoups Many times leftover vegetables are Improved by further cooking and In order to make leally good cream soup the vegetables should be so soft that they will easily pass through a sieve or puree strainer However In making cream of asparagus soup very little of the pulp ran be rubbed through a sieve as It Is too fibrous The outer leaves of celery the tough ends of aapara gus the discarded leaves of lettuce will all give sufficient flavor to make a delicate appetising cream soup VEOETABIKK FOHM basis or novr Vegetables that would otherwise be thrown away may be utilised most sstlsfactorlly In this manner If kept In a cool place cooked vege tables may be kept over one or two days before msklng them
