This is a Chinese restaurant specializing in Hong Kong style food prepared by chef Lai Hoi; Cantonese food by the creative Lum Tek and the dim sum (Hong Kong Style manapua), a lunch-time special for which this restaurant is renowned, by Li Chau. All three are master chefs from the Orient. The food is extraordinarily good, and the presentation is so artistic that ohs and ahs greet each platter as it is brought to the table. Each is carefully arranged with attention to color and form. Each is an artistic "bouquet" of foods, many of which have been carved or formed by hand, combining taste and eye companiment for cocktails.

Besides the speared shrimp, there are such taste tanatalizers as cold clucken, L'lip mast duck, tiny sweet and sour spare ribs, slices of tender abalone, tangy marinated fresh and other delicacies in season. SPEAKING OF DICK, fa doo crispy duck at Yong Sing is sensational. It is served piping hot with Peking sauce, and requires a day's notice to prepare, but it is certainly worth advance planning. The Third Anniversary specials will give diners the opportunity to taste many new and different dishes at Yong Sing, the recipes for which were brought from Hong Kong and other cities of the Orient to be produced authentically here. Black mushrooms and real Hong Kong oysters with white cabbage; abalone and fish maw stew, tender Formo-san baby corn with abalone and Chinese peas; scallop and crab meat soup with button mushrooms and vegetables; and other exotic dishes.
