CABILLAUD AUX TROIS HERBES (Cod with three herbs) 1 tablespoon olive oil 2 cups crushed tomatoes Zest of 2 lemons 1 medium onion, cut in rings 3 slices bacon, cut into thin strips 2 tablespoons parsley, chopped 1 tablespoons oregano 1 teaspoon thyme 1 endive lettuce, shredded Salt and pepper 2 tablespoons additional olive oil 8 (5-ounce) filets of codfish, snapper, amberjack, shark, cut inch thick SALADE COMPOSEE AUXCOEURS D'ARTICHAUTS (Mixed salad with artichoke hearts) 1 lb. green beans, cut into 2 Inch lengths 2 cups hearts of artichokes, cut into quarters 8 green onions, cut into YA inch pieces 8 small tomatoes, cut Into quarters cup vinegar Salt and pepper cup parsley, chopped cup olive oil 2 soft leaf lettuce Blanch green beans in salted water ten minutes. Drain and refresh in cold water. Drain again and chill. Delicately blend together green beans, artichokes, onions and tomatoes.

Blend together vinegar, salt, pepper and 1 small additional onion, cut in rings Juice of 2 lemons 2 tablespoons additional olive oil Salt and pepper 1 additional lemon sliced Into thin rounds Brush bottom of a baking dish with olive oil. Spread the crushed tomatoes over the dish. Add the lemon zest, onion rings, bacon, parsley, oregano, thyme, of the shredded endive, salt and pepper. Drizzle with additional olive oil. Place fish filets on top of the vegetable, slightly overlapping.

Distribute onion rings and remaining endive over the fish. Sprinkle lemon juice and additional olive oil over all. Salt and pepper. Bake at 350 degrees for 30 minutes. Remove from the oven and garnish with lemon slices.
