WEDNESDAY 22713 IN MEMORY B4 PAUL MCILHENNY 1944-2013 Tabasco empire thrived under his leadership MICHAEL J. MAYE 1930-2013 Fire union president was tough negotiator NEW YORK TIMES Michael Maye, center, during Uniformed Firefighters Association negotiations in 1970. The union leader was a combative advocate for his membership. Mcllhenny was born in Houston on March 19, 1944, with his twin sister, Sara. He attended the Woodberry Forest School in Virginia and the University of the South in Tennessee, and served stateside in the Marine Corps Reserve.

Mcllhenny joined the family business in 1967 and was groomed by his cousin Walter S. Mcllhenny, then president of the company. His first jobs included loading peppers in the field, processing the pepper mash and loading cases of sauce onto rail cars. He lived on the West Coast to learn the company's retail sales and food broker operations. Back at the company headquarters on Avery Island, he worked in the marketing, advertising, purchasing and food service departments, among others.

Like many in his family, Mcllhenny was active in environmental preservation efforts. He was on the board of the America's Wetland Foundation. In 2010 he was inducted into the James Beard Foundation's Who's Who of Food and Beverage in America. During Mardi Gras in 2006, with New Orleans reeling from Hurricane Katrina, Mcllhenny reigned as Rex, the King of Carnival. Survivors include wife, Judith Goodwin Mcllhenny; daughters, Barbara Mcllhenny Fitz-Hugh and Rosemary Mcllhenny Dinkins; brother, Gustaf; sister, Sara Mcllhenny Ringle; and four grandchildren.

Morty Manford, beating him and kicking him in the groin. Manford and other members of the Gay Activists Alliance had interrupted the affair to protest the news media's coverage of issues important to gay men and lesbians. A criminal court cleared Maye, citing conflicting testimony. But the episode inspired Manford's mother, Jeanne, who died in January, to help found a national advocacy organization, Parents, Families and Friends of Lesbians and Gays (or PFLAG). Maye insisted that he was not prejudiced against gay people, citing his experience as an employee at a gay club.

But he continued to oppose the hiring of gay men or lesbians as teachers and firefighters. The Advocate, a gay newspaper, included him last year on its list of "biggest homo-phobes." Michael Joseph Maye was born June 25, 1930, on East 138th Street in the South Bronx, where he grew up. He was dismissed from several grammar schools for unruly behavior. His father counseled him and his three brothers on union tactics. Michael graduated from Samuel Gompers High School, named for the labor leader, and became a "sand-hog," digging water and subway tunnels.

By Ken Belson New York Times Paul CP. Mcllhenny took joy in escorting visitors to his company's warehouse, where wooden whiskey barrels filled with the aging pepper mash that is the main ingredient in Tabasco sauce were stacked six-high to the ceiling. With a flourish, he would ask an employee to crack open a couple of barrels. After the stinging smell of the peppers was noted, he asked guests to dab the mash with a finger and gingerly lick it. Tears flowed, air was gasped for and, at the host's invitation, spit flew to clear tongues.

Mcllhenny played the culinary instigator countless times in his 45 years at the Mcllhenny the makers of Tabasco pepper sauce, perhaps Louisiana's best-known product. But he still chuckled as he gave his guests small spoons that earned them entry into the Not So Ancient Order of the Not So Silver Spoon. Mcllhenny, chairman and chief executive of the family-owned Mcllhenny died Saturday in New Orleans. He was 68. The cause was apparently a heart attack.

His death was announced by the Mcllhenny Co. Mcllhenny became chief executive in 2000. During his tenure the company enjoyed record growth, thanks in part to the introduction of new products such as chipo-tle, sweet and spicy and Buffalo-style hot sauces and the expansion of a catalog business that sells Tabasco neckties and teddy bears. Mcllhenny also formed licensing deals with the makers of Al steak sauce, Spam, other supermarket staples. The great-grandson of Edmund Mcllhenny, who invented Tabasco sauce after the Civil War, Paul Carr Polk grandchildren.

The city's firefighters, almost all of whom were white, were sometimes attacked with guns, rocks, peashooters and even refrigerators dropped from rooftops when they responded to alarms in minority neighborhoods, where most of the blazes erupted. Adding insult to injury, hundreds of the alarms were false. But as fires increased by more than half, the number of firefighters decreased by a third. With the city spiral-ing toward a fiscal crisis, the firefighting budget was, in increments, cut by $100 million. More than 50 firefighting companies were eliminated.

Throughout these years, Michael J. Maye, who died Feb. 15, had the thankless job of heading the firefighters union, the Uniformed Firefighters Association. Making his position more difficult, state law prohibited him from calling job actions, like slowdowns or strikes. Making the position almost impossible, his own membership had passed a bylaw requiring an immediate job action when a labor contract expired and no new one had been signed.

As a result, much of his membership would call in sick at the same time for several days, or would stop doing every task except responding to alarms. Even so, Maye, a former professional heavyweight boxer, did not shrink from threatening to use the ulti- DENOTES U.S. MILITARY Patricia Ann Aki Feb. 5, 2013 Patricia Ann Aki, 59, of Aiea, a Roberts Hawaii tour bus driver, died in Pali Momi Medical Center. "God knows the city is sure as hell asking for it," he said. Maye died of a heart attack in Delray Beach, his daughter, Susannah Maguire, said. He was 82 and lived in Boca Raton. Maye's combativeness drew death threats from people who resented firefighters' use of ordinary labor tactics when lives could be at stake. But it also helped win the firefighters wage increases that kept pace with raises for the police and sanitation workers.

Nonetheless, he could irritate opposing negotiators with his habit of lighting matches, one after the other, during meetings. And the deals he struck with the city often seemed to satisfy no one. Mayor John V. Lindsay called a 1972 settlement ruinous; Maye's membership called it paltry. Maye said he had picked up his hard-nosed ways from his father, a construction worker and labor leader also named Michael, who claimed to prefer fighting to eating.

The younger Michael Maye seemed to adopt the same attitude in 1972 when, at a dinner at the New York Hilton attended by city officials and reporters, he attacked a gay protester, VETERAN Chance Evans Foulk Jr. Feb. 22, 2013 Chance Evans Foulk also known as "CJ" and "Little Chance" 1 of Kailua-Kona died in Kona Community Hospital. During the Korean War he was in the Army, serving on a reconnaissance team. After the war he returned to construction and became active in union affairs. He also went back to prizefighting, compiling a record of 19 wins and no losses, but he broke his hands so often that he was forced to retire. During a construction lull, he took tests for the police and fire departments and passed both. He chose the fire department on the advice of two of his brothers, both police officers.

Maye became active in the Uniformed Firefighters and was elected its president in 1968. He remained in the post until he was defeated by Richard J. Vizzini in 1973. Two years later Maye defeated Vizzini to reclaim the presidency. He retired from the union in 1978, then worked as an official of the Teamsters union until the late 1980s.
