This updated version of the classic yule log uses chocolate sponge cake, peanut filling, and mocha frosting. Crunchy peanuts add texture and flavor to this luscious holi- daY dessert. BUCHE DE NOEL 1 cup sifted cake flour cup cocoa 1 teaspoons baking powder teaspoon salt 4 eggs, separated 1 cup sugar 3 tablespoons water 1 cup heavy cream 4 cups confectioners' sugar cup finely chopped peanuts 2 tablespoons instant coffee cup (1 stick) margarine Sift together cake flour, cocoa, baking powder and salt. Set aside.

Beat egg wjiites until stiff but not dry. In small bowl of electric mixer, beat egg yolks until thick and light. Gradually beat in sugar and water. Fold egg yolks until thick and light. Gradually beat in sugar and water.

Fold egg yolk mixture into beaten egg whites alternately with dry ingredients. Pour into a greased 15 by 10 by 1-inch jelly roll pan lined with wax paper. Bake at 350 degrees F. 15 to 20 minutes or until done. Immediately turn out onto a towel sprinkled with confectioners sugar.

Remove waxed paper. While cake is hot, roll up in towel starting from the narrow end. Allow to cool thoroughly on wire rack. TO PREPARE FILLING: Whip 1 cups heavy cream with cup-confectioners sugar until stiff peaks form. Fold in chopped peanuts.

Unroll cake and spread with cream mixture. Reroll and refrigerate while preparing frosting. TO PREPARE FROSTING: Heat cup heavy cream with instant coffee until granules dissolve. Cool. Cream margarine until fluffy.

Gradually add cooled cream and eough confectioners' sugar to make a spreadable frosting about 3 cups. Cut a diagonal slice about 2-inches at its widest side from one end of the rolled cake. Set it in place with a little frosting on the side of the cake to resemble a cut branch. Cove entire cake with remaining frosting. Mark with spatula for Keep chilled until serving time.

NEW YORK (UPI) Jan. 4 is the date for ABC's airing of the Royal Shakespeare Company's production of "Antony and Cleopatra," starring Richard Johnson and Janet Suzman. The three hour attraction is one especially conceived for television. Jackie Gleason will be host for the fifth annual American Guild of Variety Artists "Entertainer of the Year Awards" to be telecast as a 90 minute special by CBS on Jan. 18.
