The deli, in the Hickory Square Mall, opened in October, and it's the type of deli you might have visited as a child when visiting your grandmother's house if your grandmother lived in Hoboken or Jersey City in the 1950s.

That neighborhood feel is exactly the vibe owners and husband-and-wife team Carl Ruiz and Marie Riccio were going for. Ruiz is the classically trained chef and a huge fan and sometimes colleague of Guy Fieri of Food Network television fame. Riccio is the cook by instinct, who grew learning how to cook homestyle Italian meals at her grandmother's ladle in Jersey City. "I'm like her sous chef," says Ruiz, who starts the red sauce with the rest of the staff. But he doesn't finish the preparation: "We'll all wait for Marie to come and, like the queen, season it." The couple looked for a place in the Morristown area, but came upon this location and liked it immediately.

Riccio wanted the retro feeling and put in a white tile floor and red-and-white plastic and aluminum chairs and tables. Along the wall there is a long row of large cans, also red and white. They're not the kinJ she uses, but they bear her grandmother's two lucky numbers, 7 and 11. Stainless steel airplane fans hang from the ceiling. "I saw those fans and it just really tied it together," Riccio says.

The couple installed the tables and chairs when customers asked if they could stay and eat the food. Like piano players who take requests, they'll make to order. Recently someone asked for lingui-ne in clam sauce, so they obliged. "Nobody makes spaghetti and meatballs," Riccio says. The most popular sandwich is Sunday Gravy meatballs and sausage with melted mozzarella cheese, smothered in tomato gravy. Sides such as broccoli rabe, rice balls and meatballs cost $5.

Pasta and fagioli soup, $6. The "mozz" is made on the premises. There was big excitement one day in November when Guy Fieri showed up to see what Marie's was all about and ended up working in the kitchen for more than three hours.
