Mary said when her father decided to keep the restaurant open he recruited local housewives with Kentucky roots to help him develop the original recipes. "They knew how to cook," Mary said. "They taught my father how to cook." For example, the restaurant's turnips are a customer favorite.

Mary said the only secret is to add sugar and butter to them. Her family often tells customer's how to make a favorite dish, but even that can get tricky because few of the family recipes are actually written down. "My dad was always a big believer in over-do instead of under-do," Mary said. "In other words, don't under-do the amount of cheese you put in that macaroni and cheese." Welliver's continues to offer smorgasbord style dining, just as thev did when they opened. In 1978, the restaurant began offering menu dining, which includes a variety of dinner specials.

The steaks, for example, are cut fresh daily and are a customer favorite. The smorgasbord is filled with around 100 items including a salad bar, hot bar, shrimp bar and dessert bar. Mary said customer favorites include the turnips, homemade cinnamon bread, scalloped cabbage, cheese ball, potato salad, cream of onion soup, macaroni and cheese, pan-fried chicken, shrimp, chicken livers and pickled beets. The restaurant can accommodate anywhere from 20 to 200 people and will open for private fmrties on off days if the group is arge enough. During December, the restaurant is open seven days a week.

But, the restaurant stuck and Welliver's Inc. has become synonymous with good food throughout East Central Indiana and beyond. Today all three of Welliver's daughters, Mary, Janie and Margaret own the restaurant.
