MEDIUM WHITE SAUCE For creamed dishes--Melt 2 ibsps. butter or shortening in double boiler; blond in 2 tbsps. flour; add 1 tup scalded or told milk gradually, stirring constantly. Continue to cook over boiling waU«r 10 to 15 minutes longer; season with salt and pepper. Makes 1 cup. V A R I A T I O N S MEDIUM WHITE SAUCE Cheese Sauce--For vegetables --Add ?./ cup grided American cheese; stir until cheese is melted. Cream Sauce--Substitute light cream for milk. Egg Sauce--Add 1 or 2 hard-cooked eggs, ihopped., Parsley Sauce--For boiled potatoes --Add 1 tbsp. finely chopped parsley. Plmlento Souee--For vegetables--Add J j cup finely chopped or sieved pimiento. Rich Yellow Sauce --For vegetables--Blend in 1 or '2 welt beaten egg yolks just before removing from heat.
